Estrogonofe de Camarão



Uma sugestão deliciosa para o Dia das Mães. PARABÉNS MAMÃES.

O acompanhamento clássico do estrogonofe é o arroz branco e a batata. A batata pode ser frita, cozida, gratinada....

Ingredientes:
650 g de camarões médios limpos (sem casca, cabeça e rabo)
1 tomate picado
1 cebola picada
2 dentes de alho
2 colheres de sopa de ketchup
1 colher de sopa rasa de mostarda
1 caixa de creme de leite (200 g)
Sal e pimenta do reino a gosto
Azeite de oliva

Modo de fazer:
1. Refogar o tomate, a cebola e o alho no azeite de oliva para fazer um molho. Temperar com sal e pimenta. Quando o tomate murchar adicionar 1 xícara de água e cozinhar uns minutos.
2. Bater esse molho no liquidificador e voltar para a panela.
3. Adicionar o ketchup e a mostarda.
4 Adicionar os camarões temperados com sal e pimenta do reino. Cozinhar por cerca de 3 minutos.
5. Adicionar o creme de leite e misturar bem.
6. Apagar o fogo e servir.




Shrimp Stroganoff

The classic side dishes to stroganoff is white rice and potatoes. The potatoes can be fried, boiled, au gratin ....

Ingredients:
650 g  clean medium shrimp (without shell, head and tail)
1 chopped tomato
1 chopped onion
2 garlic cloves
2 tbsp ketchup
1 tablespoon mustard
1 box heavy cream (200 g)
Salt and black pepper to taste
Olive oil

Directions:
1. Braise tomato, onion and garlic in olive oil to make a sauce. Season with salt and pepper. When the tomato withers add 1 cup of water and boil a few minutes.
2. Whisk this sauce in a blender and return to the pan.
3. Add the ketchup and mustard.
4 Add the seasoned shrimps with salt and black pepper. Boil for about 3 minutes.
5. Add the cream and mix well.
6. Turn off the fire and serve.

Mexilhões com Legumes



Ingredientes:
Mexilhões pré-cozidos em água e sal.
Cebola picada
Tomate picado
Cenoura cortada em palitos
Pimentões (amarelo, vermelho e verde) cortado em tiras
Salsa e cebolinha picadas
Sal e pimenta do reino

Modo de fazer:
Nós compramos 400 g de mexilhões pré-cozidos em água e sal. Se você achar mexilhão na concha é só cozê-los em água com sal até os mexilhões abrirem as conchas.
Picar os legumes conforme indicado acima e temperar com sal e pimenta do reino.
Saltear os legumes no azeite de oliva. Quando estiverem “al dente” juntar os mexilhões e saltear um pouco mais.







Mussels with Vegetables

Ingredients:
Pre-cooked mussels in salted water.
Chopped onion
Chopped tomato
Carrot cut into sticks
Bell Peppers (yellow, red and green) cut into strips
Chopped parsley and chives
Salt and black pepper

Directions:
We bought 400 g of pre-cooked mussels in salted water. If you find mussels in the shell, just cook them in salted water until the mussels open the shells.
Chop the vegetables as indicated above and season with salt and black pepper.
Sauté the vegetables in olive oil. When they are "al dente" add the mussels and sauté a little more.

Torta de Camarão



Ingredientes:
2,5 kg de camarões médios com casca
4 tomates picados
1 cebola picada
2 dentes de alhos amassados
150 g de creme de ricota (ou requeijão)
Sal e pimenta do reino
1 a 2 colheres de farinha de trigo
Azeite de oliva

Modo de fazer:
Recheio:
1. Tirar as cascas, rabos e cabeças dos camarões e limpá-los. Os 2,5 kg com casca dão em torno de 1,4 kg de camarão sem casca.
2. Temperar o camarão com sal e pimenta do reino.
3. Refogar no azeite de oliva o tomate, a cebola e o alho até ficarem bem cozidos. Temperar com sal e pimenta do reino.
4. Adicionar o creme de ricota e os camarões. Refogar por uns 3 minutos.
5. Adicionar a farinha de trigo dissolvida em água para engrossar o recheio. Mexer para não empelotar e para alcançar a consistência desejada.
Massa:
6, Misturar com as mãos 3 tabletes (300g) de margarina com 500 g de farinha de trigo para formar a massa.
Montagem:
7. Colocar a massa nas laterais e no fundo de uma forma untada com margarina.
8. Adicionar o recheio de camarão.
9. Fazer uma tampa com a massa e colocar por cima.
10. Pincelar uma gema de ovo na tampa.
10. Assar em forno médio-alto até a massa ficar cozida.








Shrimp pie

Ingredients:
2.5 kg medium shrimp in shell
4 chopped tomatoes
1 chopped onion
2 garlic cloves crushed
150 g ricota cream (or curd cheese)
Salt and black pepper
1 to 2 tablespoons wheat flour (all purpose flour)
Olive oil

Directions:
Filling:
1. Remove shells, tails and shrimp heads and clean them. The 2.5 kg in shell give about 1.4 kg of shelled shrimp.
3. Braise in olive oil, tomatoes, onions and garlic until well cooked. Season with salt and black pepper
4. Add the ricotta cream and the shrimps. Braise for about 3 minutes.
5. Add the wheat flour dissolved in water to thicken the filling. Stir not to embark and to achieve the desired consistency.
Dough:
6, Mix with the hands 3 tablets (300g) of margarine with 500 g of wheat flour to form the dough.
Assembly:
7. Place the dough on the sides and bottom in a greased bake tray with margarine.
8. Add the shrimp filling.
9. Make a lid with the dough and put on top.
10. Brush an egg yolk on the lid.
10. Bake in medium-high oven until the dough is cooked.

Camarão Grelhado





Camarão tem um gosto tão marcante, que é delicioso mesmo feito de forma simples.

Como acompanhamento para o camarão nós fizemos um arroz negro cozido na água com sal e uma salada de pepino fatiado temperado apenas com sal e vinagre de arroz.

Ingredientes:
Camarões médios sem casca
Sal e pimenta do reino
Salsa picada (opcional

Modo de fazer:
1. Temperar os camarões com sal e pimenta do reino.
2. Levar ao fogo uma frigideira antiaderente. Adicionar um fio de azeite de oliva para garantir que o camarão não vai grudar e queimar.
3. Como o camarão cozinha rápido, grelhar por cerca de 1 a 2 minutos de cada lado.
4. Salpicar com salsa picada e servir (opcional)

Grilled shrimp

Ingredients:
Medium-sized shrimps, shelled
Salt and black pepper
Chopped parsley

Directions:

Polvo Aperitivo



3 tentáculos de polvo
2 alhos picados
Sal a gosto
Manteiga sem sal

1. Cozinhar o polvo na panela de pressão com água e sal por cerca de 15-20 minutos.
2. Picar o polvo e saltear junto com o alho em manteiga ou margarina (ou azeite de oliva).






Octopus Appetizer

3 octopus tentacles
2 chopped garlic
Salt to taste
Butter without salt

1. Cook the octopus in the pressure cooker with water and salt for about 15-20 minutes.
2. Chop the octopus and sauté with the garlic in butter or margarine (or olive oil).

Bobó de Camarão



O Bobo de Camarão é um prato de origem africana trazido pelos escravos negros para o Brasil. Mas cresceu na Bahia, onde tornou-se um prato típico.
Originalmente era preparado com o inhame originário da África. Aqui, no Brasil foi substituído por um ingrediente de origem indígena a mandioca.
É um prato típico que ilustra as três primeiras influências da culinária brasileira. Sua característica indígena está no uso do alimento nativo: a mandioca. Alho, cebola, cominho, coentro, gengibre são sobrevivências das primeiras hortas portuguesas no início da colonização do Brasil. O azeite de dendê foi trazido com os escravos. Na Bahia incorporou-se ainda o leite de coco e o camarão. A mucama cozinheira aproveitou os elementos de que dispunha para fazer esse rico prato da culinária brasileira.
Serve 2
Ingredientes
100 ml de leite de coco
pimenta de cheiro a gosto
gengibre e coentro picado a gosto
2 alhos picados
1/2 cebola picada
1/2 litro de água
limão
Azeite de oliva
1/4 de xícara (chá) de azeite de dendê
1 1/2 tomates sem pele e sem semente picados
1/4 pimentão vermelho picado (opcional)
400 g de mandioca
350 g de camarão cinzento
Modo de fazer
1. Descascar os camarões, aferventar as cabeças e as cascas em um ½ litro de água salgada, coar e reservar.
2.Cozinhar as mandiocas sem a casca na água coada das cascas de camarão (para simplificar, pode cozinhar a mandioca em água com sal, não fazendo o passo 1). Depois de cozida bater em liquidificador ou processador para formar um purê. Usar a água do cozimento para dar a consistência desejada.
3.Saltear os camarões (temperados com sal e gotas de limão), a cebola, o alho e o gengibre (opcional) no azeite de oliva.
4.Refogar (o pimentão) o tomate sem pele no azeite, em fogo baixo, até o tomate começar a desmanchar.
5. Adicionar o purê de mandioca, os camarões salteados, o azeite-de-dendê, o leite de coco, a pimenta e o coentro. Misturar bem.








Shrimp Bobo
Serves 2

Shrimp Bobo is a dish of African origin brought by slaves to Brazil. But it grew in State of Bahia, where it became a typical dish.

Originally it was prepared with yam from Africa. Here in Brazil was replaced by an ingredient of indigenous origin the cassava (manioc).

It is a typical dish that illustrates the first three influences of Brazilian culinary. Its indigenous characteristic lies in the use of native food: cassava. Garlic, onion, cumin, coriander, ginger are the survival of the first Portuguese vegetable gardens at the beginning of the colonization of Brazil. The palm oil was brought with the slaves. In Bahia, coconut milk and shrimp were also incorporated. The cook maid of African origin took advantage of the elements she had to make this rich dish of Brazilian cuisine.

Ingredients
 100 ml coconut milk
 chili pepper to taste
 minced ginger and coriander to taste
 Salt to taste
 2 chopped garlic
 1/2 chopped onion
 1/2 l water
 lemon
 Olive oil
 1/4 cup palm oil
 1 1/2 tomatoes skinless and chopped seed
 1/4 chopped red bell pepper (optional)
 400 g manioc (cassava)
 350 g gray shrimp

Directions:
1. Shelled shrimp, boil heads and skins in ½ liter of salt water, strain and set aside.
2. Cook the cassava without the peel in boiled water of the shrimp shells (for simplicity, you can cook cassava in salted water, not doing step 1). Once cooked beat into a blender or processor to form a puree. Use the water from the cooking to give the desired consistency.
3. Sautée the shrimps (seasoned with salt and lemon drops), ginger (optional), onion and garlic in olive oil.
4. Braise (bell pepper) skinless tomato in the olive oil, over low heat, until the tomato begins to undo.
5. Add manioc puree, sautéed shrimps, palm oil, coconut milk, pepper and he coriander. Mix well.

Arroz com Polvo



600 g de tentáculos de polvo limpos
1/2 cebola picadinha
2 dentes de alho picadinhos
Sal a gosto

Cozinhar o polvo na panela de pressão com os demais ingredientes por 20 a 25 minutos.
Reservar a água do cozimento do polvo.

1 cebola picada
2 tomates picados
1 dente de alho picado
Açafrão (uma pitada)
Azeite de oliva

Picar polvo
Refogar o polvo com a mistura de tomate, cebola, alho e açafrão no azeite de oliva.

2 xícaras de arroz

Adicionar o arroz ao refogado do polvo e misturar.
Adicionar 2 xícaras da água do cozimento.
Baixar o fogo, tampar a panela e cozinhar até o arroz secar.








Rice with Octopus

600 g clean octopus tentacles
1/2 onion chopped
2 cloves garlic minced
Salt to taste

Cook the octopus in the pressure cooker with the remaining ingredients for 20 to 25 minutes.
Reserve the cooking water.

1 chopped onion
2 tomatoes, chopped
1 clove garlic, minced
Saffron (a pinch)
Olive oil

Chop octopus
Braise the octopus with the mixture of tomato, onion, garlic and saffron in the olive oil.

2 cups rice

Add the rice to the Octopus and sautée.
Add 2 cups of reserved water.
Lower the heat, cover the pan and cook until the rice is dry and cooked.

Caldinho de Camarão feito das Cascas e Cabeças do Camarão


A extração do caldo a partir das cascas e cabeças do camarão serve de base para diversos pratos e é uma maneira de economizar esse caro ingrediente. Com o caldo podemos fazer um caldinho aperitivo, um pirão, uma sopa ou acentuar o gosto do camarão em outros pratos.

Caldo:
1. Lavar as cabeças e as cascas de camarões em bastante água.
2. Colocar as cascas e cabeças numa panela. Adicionar a cebola picada e o alho amassado e cozinhar em água com sal (ou só água).
2. Depois de cozido, passar o conteúdo da panela por uma peneira, espremendo bem as cascas e cabeças.

Caldinho Aperitivo:
1. Ferver o caldo.
2. Adicionar um molho de tomate (nós usamos molho de tomate com manjericão comprado pronto) na proporção de 3 colheres de sopa para cada xícara de caldo.
3. Adicionar leite de coco na proporção de 2 colheres de sopa para cada xícara de caldo.
4. Servir bem quente com uma boa pimenta ao lado.





Shrimp Broth Appetizer made from Shrimp Peels and Heads

Camarão com Catupiry


O queijo catupiry é um requeijão brasileiro, sendo usado em diversos pratos. É uma espécie de requeijão, cuja receita foi desenvolvida e a marca registrada pelo casal de imigrantes italianos, Isaíra e Mario Silvestrini, em 1911. A história começa em Lambari, no Estado de Minas Gerais. Em 1949, a empresa se mudou para a cidade de São Paulo e se instalou definitivamente no bairro do Bom Retiro.

A cremosidade do queijo e sua versatilidade deram origem a uma lista de pratos que parece interminável: camarão com Catupiry, filé de frango ao Catupiry, bacalhau com Catupiry, pão de queijo recheado com Catupiry e a coxinha creme de galinha, clássico das padarias e botecos da capital paulista. Faz sucesso também em pizzas e na versão da sobremesa brasileira conhecida como Romeu e Julieta (goiabada com queijo Catupiry).

Ingredientes:

3 kg de camarões médios com casca
5 tomates picados
2 cebolas picadas
6 dentes de alho amassados
2 colheres de sopa de extrato de tomate
Sal a gosto
1 e ½ caixa de catupiry (cerca de 500 a 600 g)
Azeite de oliva

Modo de fazer:

1.    Descascar e lavar os camarões. (Reservar as cascas, cabeças e rabos para fazer caldo e utilizar em outras receitas, como pirão, sopa ou caldinho aperitivo).
2.    Refogar os tomates, o extrato de tomate, as cebolas e os dentes de alho no azeite de oliva, até os tomates desmancharem. Temperar com sal.
3.    Bater essa mistura refogada no liquidificador.
4.    Voltar com a mistura para a panela
5.    Quando a misturar ferver, adicionar os camarões temperados com sal.
6.    Quando os camarões ficarem com cor, adicionar e misturar o queijo catupiry.
7.    Deixar engrossar em fogo médio, com a panela destampada, até alcançar a consistência desejada.

Shrimp With Catupiry

The catupiry cheese is a Brazilian curd cheese, being used in several dishes. It is a kind of curd cheese, whose recipe was developed and the trademark registered by the Italian immigrant couple, Isaíra and Mario Silvestrini, in 1911. The story begins in the city of Lambari, in the State of Minas Gerais. In 1949, the company was moved to the city of São Paulo and settled permanently in the neighborhood of Bom Retiro.

Ingredients:

3 kg of medium shrimp in shell
5 chopped tomatoes
2 chopped onions
6 cloves garlic, crushed
2 tablespoons tomato paste
Salt to taste
1 and ½ box of catupiry (about 500 to 600 g)
Olive oil

Directions:

1. Peel and wash the shrimp. (Reserve the husks, heads and tails to make broth and use in other recipes such mush, soup or appetizer broth).
2. Braise the tomatoes, tomato paste, onions and garlic in olive oil until the tomatoes come undone. Seasoning with salt
3. Beat this braised mixture in the blender.
4. Return with the mixture to the pan
5. When the mixture boils, add the shrimp seasoning with salt.
6. When the shrimp turn color, add and mix the catupiry cheese.

7. Allow to thicken over medium heat, with the pan uncovered, until reaching the desired consistency.

Risoto de Polvo a Moda da Lívia


Estivemos em Búzios no feriado do dia 21 de abril e uma amiga que estava conosco, a Lívia, proprietária da DELLYGIL, situada na Cobal do Leblon (Rio de Janeiro), fez um Risoto de Polvo maravilhoso para o almoço. Observamos que a receita foi feita com produtos vendidos na delicatessen, inclusive os ingredientes importados. Vale a pena dar uma passada na Cobal para conhecer a qualidade e variedade dos produtos da DELLYGIL.

Como estamos falando de Búzios, não custa postar uma foto da linda Praia Azeda para deleite de nossos olhos.


Ingredientes:

1/2 kg de tentáculos de polvo já limpos (usamos um polvo importado da Espanha)
1 cebola grande picada
2 alhos picados
1 envelope de açafrão
Páprica picante a gosto
Sal a gosto
1 xícara de vinho tinto seco de boa qualidade
Azeite de oliva
1/2 kg de arroz arbóreo

Modo de fazer:

POLVO
1. Cozinhar o polvo na panela de pressão com água por cerca de 15 minutos. Reservar 1 xícara de água do cozimento.
2. Picar o polvo e saltear junto com o alho em azeite de oliva.

ARROZ
1. Refogar a cebola picada no azeite de oliva até ficar transparente.
2. Adicionar o arroz na panela e saltear junto com a cebola.
3. Adicionar a água do cozimento do polvo e começar a cozinhar o arroz sempre mexendo.
4. Adicionar os temperos: sal, açafrão e páprica.
5. Adicionar o vinho e continuar mexendo até reduzir um pouco o líquido.
6. Adicionar o polvo picado.
7. Sempre mexendo, reduzir o líquido até o ponto desejado do risoto. Observação: não secar o arroz, pois tem que ficar úmido.












Octopus Risotto Lívia Style

We were in Buzios during the April 21 holiday and a friend who was with us, Lívia, owner of DELLYGIL, located in Leblon's Cobal (Rio de Janeiro), made a wonderful Octopus Risotto for lunch. We observed that the recipe was made with products sold at the delicatessen, including imported ones. It is worth giving a try in Cobal to know the quality and variety of DELLYGIL products.

As we are talking about Búzios, it is not difficult to post a photo of the beautiful Azeda Beach to the delight of our eyes.

Ingredients:

1/2 kg of octopus tentacles already cleaned (we used an octopus imported from Spain)
1 large chopped onion
2 chopped garlic
1 envelope of saffron
Spicy paprika to taste
Salt to taste
1 cup dry red wine of good quality
Olive oil
1/2 kg of arboreal rice

Directions:

OCTOPUS
1. Cook the octopus in the pressure cooker with water about 15 minutes. Reserve 1 cup of cooking water.
2. Chop the octopus and sauté with the garlic in olive oil.

RICE
1. Braise the chopped onion in the olive oil until transparent.
2. Add the rice in the pan and sauté with the onion.
3. Add the cooking water reserved and start cooking the rice always stirring.
4. Add the seasonings: salt, saffron and paprika.
5. Add the wine and continue stirring until the liquid is reduced slightly.
6. Add the chopped octopus.
7. Whenever stirring, reduce the liquid to the desired point of the risotto. Note: Do not dry the rice because it has to
