Frango ao Curry com Damasco

Baseado numa receita do The Book of Curries & Indian Foods

Ingredientes:

3 coxas e sobrecoxas de frango sem a pele
½ colher de chá de pimenta do reino
1 colher de sopa de curry
1 (2,5 cm) gengibre ralado (nós usamos 1 colher de chá de gengibre em pó)
2 dentes de alho amassados
Sal a gosto
1 xícara de damascos secos, hidratados em água por 2 horas
2 colheres de sopa de óleo vegetal
2 cebolas pequenas, cortadas em fatias finas
1 colher de chá de cominho
2 tomates picados
1 colher de sopa de açúcar
2 colheres de sopa de vinho branco (ou vinagre de vinho branco)

Modo de fazer:

Numa vasilha, adicionar os cinco primeiros temperos e misturar. Temperar o frango com essa mistura e deixar o frango pegando gosto na geladeira por 2 horas.

Esquentar o óleo e dourar o frango por cerca de 5 minutos. Tirar o frango da panela.

Adicionar na panela as cebolas. Refogar até começarem a ficar macias. Adicionar o cominho e refogar mais um pouco.

Retornar o frango para a panela. Adicionar os tomates, tampar e cozinhar por 15 a 20 minutos em fogo baixo. Acrescentar os damascos cortados ao meio, sem a água, o açúcar e o vinho branco. Cozinhar com a panela tampada por mais 10 a 15 minutos ou até o frango ficar macio.

Ingredients:

2 1/2 lbs chicken pieces, skinned
1/2 teaspoon chile powder (we use black pepper)
1 tablespoon garam masala (we use curry powder)
1 (1 inch) piece fresh ginger, grated
2 garlic cloves, crushed
Salt to taste
1 cup dried apricots, soaked 2-3 hours, or 2 cups fresh or canned apricots
2 tablespoons vegetable oil
2 onions, finely sliced
1 teaspoon cumin
1 (14oz) can chopped tomatoes (we use 2 fresh tomatoes, chopped)
1 tablespoon sugar
2 tablespoons white wine (or white wine vinegar)

How to make:

Rinse chicken; pat dry with paper towels. Cut into bite-sized pieces and put in large bowl. Add chile powder, garam masala ginger and garlic, toss well to coat chicken. Cover and refrigerate 2-3 hours to allow chicken to absorb flavours.

Heat oil in a large heavy saucepan, add chicken. Cook over high heat about 5 minutes, or until browned all over. Remove from pan and set aside. Add onions to pan and cook, stirring about 5 minutes, until soft. Add cumin, cook 1 minute more. Return chicken to pan, add tomatoes and cover and cook over low heat 20 minutes. Add (drained) apricots, add salt, sugar and white wine. Simmer, covered at least 15 minutes, until tender. Serve hot.

Fettuccine na Manteiga com Sálvia

Ingredientes:

5 ninhos de Fettuccine
Água
Sal
2 colheres de sopa de manteiga
4 folhas de sálvia (ou 2 colheres de chá de sálvia seca)
Queijo parmesão ralado (opcional)

Modo de fazer:

Cozinhar o fettuccine na água e sal até ficar al dente. Escorrer.

Esquentar a manteiga em fogo baixo numa panela até derreter. Colocar a sálvia. Acrescentar o fettuccine e misturar. Desligar o fogo e servir.



English version: Fettuccine in butter with sage

Ingredients:

5 nests of Fettuccine
Water
Sal
2 tablespoons butter
4 sage leaves (or 2 teaspoons dried Sage)
Parmesan cheese grated (optional)

How to make:

Boil fettuccine in water and salt until al dente. Drain.

Warm butter over low heat in a saucepan until butter is melted. Place the Sage. Add the fettuccine and mix. Turn off the heat and serve.

Arroz Integral com Legumes e Batata Palha




Ingredientes:

1 xícara de cada legume picado: cebola, tomate, cenoura, vagem, couve-flor e repolho
3 xícaras de arroz integral cozido
Alho e sal
Azeite
Batata palha
Cheiro verde

Modo de fazer:

Refogar no azeite temperado com alho e sal, a cebola e os tomates em fogo baixo-médio até começar a amolecer. Colocar a cenoura e a vagem e continuar refogando. Adicionar a couve-flor e por último o repolho. Botar em fogo baixo, tampar a panela e cozinhar até ficar al dente.

Acrescentar o arroz integral cozido temperado apenas com azeite, alho e sal. Misturar bem. Colocar ½ xícara de água e esquentar até a água secar. Misturar a batata palha e servir.

Se desejar colocar por cima o cheiro verde.

English version: Brown Rice with vegetables and potatoes sticks

Ingredients:

1 cup each, chopped vegetables: onion, tomato, carrot, green beans, cauliflower and cabbage
3 cups cooked brown rice
Garlic and salt
Olive oil
Potatoes sticks
Chive and parsley chopped (optional)

How to make:

Braise in oil seasoned with garlic and salt, onion and tomato in medium-low heat until starting to soften. Add carrot and green beans and continue to braise. Add cauliflower. Then add cabbage. Turn the heat to down, cover the pan and cook until vegetables are al dente.

Add cooked brown rice seasoned with olive oil, garlic and salt. Mix well. Put ½ cup water and warm up until the water dry. Mix potatoes sticks and serve.

Filé de Peixe Assado com Molho de Azeitona



Ingredientes:

4 filés de peixe grandes
Sal a gosto
2 colheres de sopa de azeite extra-virgem, divididas
1 colher de chá de manjericão em pó
3 tomates sem as peles e as sementes, picados
½ xícara de azeitonas picadas
½ colher de chá de pimenta calabresa
2 dentes de alho amassados
½ xícara de cebola picada fina
2 colheres de sopa de suco de limão

Modo de fazer:

Pré-aquecer o forno.

Temperar os filés com sal.

Untar um pirex com 1 colher de sopa de azeite. Colocar os filés.

Numa vasilha fazer uma mistura com os demais ingredientes: 1 colher de sopa de azeite, manjericão, tomates, azeitonas, pimenta calabresa, alho, cebola e suco de limão. Colocar a mistura sobre os filés

Assar sem cobrir por cerca de 15 minutos ou até ficar no ponto.



English version: Baked Fish Fillets with Green Olives Sauce

Ingredients:
4 big fish fillets
Salt to taste
1 tablespoon extra-virgin olive oil, divided
1 teaspoon dried basil
3 tomatoes, peeled, seeded and chopped
1/2 cup coarsely chopped green olives
1/2 tsp. calabrese pepper
2 garlic cloves, minced
1/2 cup finely chopped onion
2 tablespoon fresh lime or lemon juice

Preheat the oven to 400 degrees.

Season fish with salt.

Lightly olive oil a shallow baking dish large enough to hold the fillets in one layer. Arrange the fillets.

In a bowl stir together the olive oil, the basil, the tomatoes, the olives, the calabrese pepper, the garlic, the onion, and the lime or lemon juice. Spoon the tomato mixture over the fillets.

Bake the fish, uncovered, in the middle of the oven 15 to 20 minutes, or until it just flakes.

Arroz com Pinhão



Ingredientes:

1 xícara de arroz
1 xícara de pinhão cozido em água e sal, picado ao meio
2 dentes de alho amassados
½ cebola picada
Sal a gosto
Azeite de oliva

Modo de fazer:

Refogar no azeite a cebola e o alho por 1 ou 2 minutos. Adicionar os pinhões e refogar mais 1 minuto. Adicionar o arroz e dar uma refogada. Acrescentar 2 xícaras de água. Quando começar a ferver, baixar o fogo e cozinhar com a panela tampada até a água secar.




English version: Rice with Pine Nuts

Ingredients:

1 cup rice
1 cup cooked pine nuts in boiling water and salt, chopped in a half
2 garlic cloves, mashed
½ onion, chopped
Salt to taste
Olive oil

How to make:

Braise in olive oil onion and garlic for 1 to 2 minutes. Add the pine nuts and braise over 1 minute. Add rice and braise. Add water and when beginning to boil, turn the heat to low and cook cover until the water dry.

Pirão de Carne



Toda vez que fizer uma carne de boi com muito caldo, como um cozido ou uma costela cozida, podemos fazer um pirão usando o caldo do processo de cozimento. Na foto acima mostramos um pirão feito com o caldo do cozimento das carnes de um cozido, feito pela nossa amiga Yara.

Modo de fazer:

Ferver o caldo coado, adicionar a farinha de mandioca tostada aos poucos, mexendo sem parar para não empelotar. Baixar o fogo e continuar mexendo até alcançar a consistência desejada. Enfeitar com ovo cozido picado.

Every day you make a dish of beef with broth, as a braised ribs or a cozido (Portuguese stew), you can make a meal mush using the broth of cooking process. The photo above shows a meal mush made with the broth of the cooking cozido’s meats, done by our friend Yara.

How to make:

Bring to boil the broth. Slowly pour in the toasted manioc flour stirring in circular movements with a wood spoon to prevent lumps. Allow the mixture to bubble, whisking constantly. Reduce heat to low. Keep stirring until mush is done. Garnish with boiled egg chopped.
