Peroá Frito



Peixe-porco ou Peroá é o nome comum dado aos peixes tetraodontiformes da família Balistidae. O nome de peixe-porco, advém do som que emitem ao serem removidos da água, parecendo-se muito com o som de um porco, mas é também conhecido pelos nomes de peroá, acarapicu e porquinho.

É um peixe que apresenta uma ampla distribuição em todas as costas do Atlântico, sendo também peixe muito valorizado tanto pelas pescarias comerciais como recreativas. A sua carne é considerada de excelente qualidade.

A pressão das frotas pesqueiras de diferentes países, têm levado a uma sobre-exploração de alguns stocks e assim, a espécie é considerada vulnerável pela IUCN Red List, com uma tendência decrescente para a sua população.

No Brasil, esta espécie foi alvo de uma captura intensiva pela frota industrial ao longo de 20 anos. No passado era uma espécie incluída na categoria de peixe - “diversos”, mas ao longo dos últimos 15 anos tem se tornado um recurso pesqueiro muito valioso para a economia pesqueira. É atualmente uma das espécies mais capturadas pela pesca comercial. O uso intensivo de redes de arrasto é uma das principais teorias para a sua sobre-exploração, cerca de 46% das capturas foram compostas por peixes imaturos, o que aumenta a probabilidade de ocorrência de uma sobrepesca em crescimento.

Foi então, descrito um declínio acentuado para os stocks referentes aos estados de São Paulo, Rio Grande do Sul e Espírito Santo. No Espírito Santo, já se anuncia a extinção comercial da espécie devido à grande diminuição do seu stock.



Ingredientes:

3 peroás limpos sem as cabeças e a pele
Sal
Pimenta do reino
1 ovo batido
Farinha de trigo
Óleo vegetal
Fatias de limão

Modo de fazer:

1. Temperar os peroás com sal e pimenta do reino
2. Empanar os peroas no ovo e na farinha de trigo.
3. Fritar no óleo vegetal até ficarem dourados.
4. Colocar sobre um papel para escorrer o excesso de gordura.
5. Servir com fatias de limão em cima.
 







Fried Peroá

Pigfish or Peroá is the common name given to the tetraiodontiform fish of the family Balistidae. The name of pigfish, comes from the sound they emit when they are removed from the water, looking very much like the sound of a pig, but it is also known in Brazil by the names of peroá, acarapicu and litle pig.

It is a fish that has a wide distribution in all the coasts of the Atlantic, being also fish very valued for both commercial and recreational fisheries. Their meat is considered of excellent quality.

The pressure of the fishing fleets of different countries has led to an over-exploitation of some stocks and thus, the species is considered vulnerable by the IUCN Red List, with a decreasing trend for its population.

In Brazil, this species was intensively captured by the industrial fleet over 20 years. In the past it was a species included in the category of fish - "miscellaneous", but over the last 15 years it has become a very valuable fishing resource for the fishing economy. It is currently one of the most caught species by commercial fishing. The intensive use of trawls is one of the main theories for their overexploitation, about 46% of the catches were composed of immature fish, which increases the probability of a growing overfishing.

It was then described a marked decline for the stocks in the states of São Paulo, Rio Grande do Sul and Espírito Santo. In Espírito Santo, the commercial extinction of the species is already announced due to the great decrease of its stock.



Ingredients:

3 peroás clean without the heads and skin
Salt
Black pepper
1 beaten egg
All purpose flour
Vegetable oil
Slices of lemon

Directions:

1. Season the peroás with salt and black pepper
2. Breed the peroas in the egg and in the flour.
3. Fry in vegetable oil until golden brown.
4. Place on paper to drain excesso of fat.
5. Serve with lemon slices on top.

Banana Cozida em Calda de Açúcar Mascavo



Bananas nanica (bananas d’água) inteiras sem casca
Açúcar mascavo
Canela em pó a gosto
Água

Numa panela colocar água, açúcar mascavo e canela em pó a gosto. Misturar até dissolver o açúcar. Deixar ferver. Deixar no fogo até virar uma calda rala.

Baixar o fogo e adicionar as bananas. Ir regando com a calda até as bananas ficarem cozidas (macias), de 8 a 10 minutos. Não esquecer de virar as bananas uma vez.

Servir em temperatura ambiente ou quente com sorvete de creme.




Cooked Banana in Brown Sugar Syrup

Whole bananas without skin
Brown sugar
Cinnamon powder to taste
Water

In a pan, put water, brown sugar and cinnamon powder to taste. Mix until the sugar dissolves. Let it boil and leave it on the heat until it became a thin syrup.

Down the fire and add the bananas. To water with the syrup until the bananas are cooked (soft), 8-10 minutes. Do not forget to turn the bananas once.

Serve at room temperature or hot with ice cream.

Filé de Cação Cozido



3 filés de cação temperados com sal e pimenta do reino
1 tomate sem pele picado
½ cebola picada
1 dente de alho amassado
Salsa e cebolinha picados
Sal e pimenta do reino
Azeite de oliva

Refogar tomate, cebola e alho no azeite de oliva. Temperar com sal e pimenta.
Quando o tomate murchar, adicionar os filés de cação e a salsa e cebolinha.
Tampar a panela e cozinhar até os filés ficarem cozidos.
Servir com fatias de limão ao lado.

Cooked shark filet

3 fillets of shark seasoned with salt and black pepper
1 tomato without skin, chopped
½ chopped onion
1 clove garlic, crushed
Parsley and chives chopped
Salt and black pepper
Olive oil

Sauté tomato, onion and garlic in olive oil. Season with salt and pepper.
When the tomato withers, add the filles and the parsley and chives.
Cover the pan and cook until the fillets are cooked.
Serve with lemon or lime wedges on the side.

Cuscuz de Brócolis Americano



1. Cortar o brócolis em florete
2. Passar o brócolis em um processador de alimentos (cuidado para não triturar demais)
3. Temperar com sal e pimenta do reino.
4. Numa frigideira saltear no azeite de oliva com um ou dois dentes de alho picados.
5. Adicionar o brócolis a frigideira e saltear por 1 ou 2 minutos.

Broccoli Couscous

1. Cut the broccoli into florets
2. Pour the broccoli into a food processor (be careful to not crush too much)
3. Season with salt and pepper.
4. In a frying pan sauté in olive oil with one or two cloves of chopped garlic.
5. Add broccoli to frying pan and sauté for 1 or 2 minutes.

Pernil de Porco na Pressão



Ingredientes:

800 g de pernil de porco sem osso
sal

Marinada:
Vinho tinto
Cebola picada
Alho amassado
Molho inglês
Ketchup (nós usamos ketchup de goiaba)

Modo de fazer:

Esfregar o pernil com sal e colocar de molho na marinada por cerca de 2 a 3 horas.
Colocar o pernil numa panela de pressão, sem a tampa, e ir esfregando no fundo até selar e dourar de todos os lados. Ir adicionando a marinada e um pouco de água durante o processo.
Adicionar 4 xícaras de água, tampar a panela de pressão e cozinhar por cerca de 20 minutos.







Pork Shank in the Pressure Cooker

Ingredients:

800 g boneless pork shank
salt

Marinade:
Red wine
Chopped onion
Crushed garlic
Worcesrtersauce
Ketchup (we use guava ketchup)

Directions:

Rub the shank with salt and soak in the marinade for about 2 to 3 hours.
Place the shank in a pressure cooker, without the lid, and rub the bottom to seal and brown on all sides. Go adding the marinade and a little water during the process.
Add 4 cups of water, cover the pressure cooker and cook for about 20 minutes.

Repolho Assado



Essa receita é rápida de fazer, constituindo-se numa excelente opção de acompanhamento. Nós fizemos com repolho roxo, mas pode também ser feita com repolho verde.

Ingredientes:
1 repolho inteiro
Sal e pimenta do reino
Orégano
Salsa e cebolinha
Azeite de oliva

Modo de fazer:
1. Cortar o repolho em fatias de cerca de 1,5 cm.
2. Untar as fatias com azeite de oliva dos dois lados e colocar num refratário.
3. Temperar com sal, pimenta do reino e orégano.
4. Regar com um pouco mais de azeite de oliva.
5. Salpicar com salsa e cebolinha picadas.
6. Cobrir o refratário com papel alumínio.
7. Assar em forno a 200º C por 15 minutos.
8. Tirar o papel alumínio. Se necessário colocar mais azeite. Assar descoberto por mais 4 a 5 minutos.







Roasted Cabbage

This recipe is quick to do constituting an excellent option of side dish. We made it with purple cabbage, but it can also be made with green cabbage.

Ingredients:
1 whole cabbage
Salt and black pepper
Oregano
Parsley and chive
Olive oil

Directions:
1. Cut the cabbage into slices about 1.5 cm.
2. Grease the slices with olive oil on both sides and place in a refractory.
3. Season with salt, black pepper and oregano.
4. Water with a little more olive oil.
5. Splash with chopped parsley and chives.
6. Cover the refractory with na aluminum foil.
7. Bake at 200º C for 15 minutes.
8. Remove foil. If necessary add more olive oil. Bake uncovered for another 4 to 5 minutes.

Escondidinho Invertido de Carne-seca com Mandioca



Escondidinho são pratos em que a carne fica escondida embaixo de um purê de mandioca ou batata ou inhame. Nesse prato invertemos a ordem colocando a carne-seca encima do purê de mandioca.

Carne-seca:
1. Dessalgar a carne seca em água, trocando a água umas 3 vezes.
2. Cozinhar a carne seca com água numa panela de pressão por 15 minutos.
3. Picar a carne seca
4. Numa frigideira, saltear 1 cebola fatiada no azeite de oliva.
5. Adicionar a carne seca e saltear.

Purê de Mandioca:
1. Colocar os pedaços de aipim numa panela de pressão.
2. Adicionar água temperada com sal até uns dois dedos acima do aipim.
3. Tampar a panela de pressão e cozinhar por uns 15 minutos ou até que o aipim comece a desmanchar
4. Amassar o aipim com um garfo ou colher de pau (pode também bater no processador ou liquidificador).
5. Adicionar manteiga a gosto ao o purê ainda quente. Misturar.

Na hora de servir:
Colocar no prato uma porção de purê de mandioca e por cima a carne seca a gosto.




Upsidedown Escondidinho of Jerked Meat with Cassava

Escondidinho are dishes in which the meat is hidden under a mashed cassava or potato or yam. In this dish we reverse the order by placing the dried meat on top of the manioc puree.

Jerked beef:
1. Take out the salt of the jerked beef in water, changing the water about 3 times.
2. Cook jerked beef with water in a pressure cooker for 15 minutes.
3. Chop the jerked beef
4. In a frying pan, sauté 1 sliced onion in olive oil.
5. Add the beef and sauté.

Cassava Puree:
1. Place the pieces of cassava (manioc) in a pressure cooker.
2. Add salt water until two fingers above the cassava.
3. Cover the pressure cooker and cook for about 15 minutes or until the cassava begins to break
4. Knead the cassava with a fork or wooden spoon (we can also hit in the processor or Blender).
5. Add butter to taste to the puree still warm. Mix.

At the time of serving:
Put a portion of cassava puree on the plate and over the jerked beef to taste.
