Ingredientes
850 kg de carne moída
1 1/2 xícaras de farinha de rosca
1/2 xícara de cebola picada
1/2 xícara de leite
2 ovos batidos
3 colheres de sopa. ketchup
1 1/2 colher de sopa de molho inglês
2 colheres de chá salsa picada
Sal
2 dentes de alho amassados
Pimenta do reino

Para a cobertura: (opcional)
2 colheres de sopa de ketchup
1 Colher de Sopa. açúcar mascavo
1 Colher de Sopa. vinagre de vinho

Instruções
Pré-aqueça o forno a 200º C.

Tirar do forno.

Classic Meatloaf

Ingredients
850 g ground beef
1 1/2 cups dried bread crumbs
1/2 cup diced onion
1/2 cup milk
2 egg beaten
3 tbsp. ketchup
1 1/2 tbsp. Worcestershire sauce
2 tsp. parsley leaves
Salt
2 cloves garlic
black pepper

For the Topping: (optional)
2 tbsp cup ketchup
1 tbsp. brown sugar
1 tbsp. wine vinegar

Instructions
Preheat oven to 200º C.

In a large bowl, add the beef, bread crumbs, onion, milk, egg, 3 tablespoons ketchup, worcestershire sauce, parsley, salt, garlic powder, and pepper. Use your hands to mush and mix these ingredients together until well combined.*

Add the meat mixture to a loaf pan gresed with olive oil. Pat the meat down into an even layer. Smooth the surface with the back of a tablespoon.

Bake uncovered for 40 minutes (place a refractory bowl of water under the oven). If you do not use the cover bake for 1 hour.

Take it out of the oven.

If using topping: In a small bowl, add ketchup, brown sugar and vinegar. Stir to mix well. Pour the sauce on top of the meatloaf and spread it in an even layer. You can serve the sauce separately in a bowl.

Bake for more 20 minutes

Let the cake rest for 8 to 10 minutes before unmold the cake and serving (or may crumble). **
*Be sure to mix the meat really well.  This is a very moist meatloaf recipe so under mixing can cause the meatloaf to be too soft/mushy.
**I use two thin spatulas to remove the meatloaf from the pan and transfer it to a cutting board. You could also slice and serve the meatloaf directly from the loaf pan, or use parchment paper to line the pan for easy removal.

Acquacotta

Serve 4

•          20 g. Cogumelos Porcini Secos
•          1/2 xícara de vinho branco seco
•          água ou caldo de vegetais
•          Couve rasgada
•          Repolho fatiado
•          Azeite
•          Sal e pimenta do reino
•          4 ovos

Adicionar sal e pimenta do reino.
5. Neste ponto, adicione a couve e o repolho, adicione sal e pimenta, se necessário, baixe o fogo e cubra a panela.

Acquacotta

Serves 4

The origins of this soup are Etruscan, but more specifically its tradition can be traced to the Maremma área from Tuscan (Italy).
Acquacotta was invented in part as a means to make stale, hardened bread edible.[5] People that worked away from home for significant periods of time, such as woodcutters and shepherds, would bring bread and other foods with them to hold them over.[5] Acquacotta was prepared and used to marinate the stale bread, thus softening it
Asimple mix of fresh ingredients that has changed through centuries but has always remained a synonym of simplicity.  Its most common version is made using water, onions, tomatoes, extra virgin olive oil, celery, carrot, toasted homemade bread, grated pecorino cheese and eggs.

Ingredients
·                     2 celery stalks finely chopped
·                     1 white onion chopped
·                     400 g. canned Tomatoes (drainned) or 2 ripe tomatoes chopped, seedless
·                     20 g. Dried Porcini Mushrooms
·                     1/2 cup dry white wine
·                     Water or vegetable broth
·                     Kale, torn
·                     Cabbage, sliced
·                     Olive Oil
·                     Salt and black Pepper
·                     4 eggs
·                     Tuscan or Italian Bread slices
·                     Pecorino or parmigiano cheese grated

Preparation
1. Braise (low heat) the finely chopped celery stalks and onion in a pan with olive oil. Add salt and black pepper. Continue to cooking stirring occasionally, until the vegetables soften, 15 to 20 minutes.
2. Increase the heat to medium, add the white wine, and simmer 3 to 4 minutes.
3. Stir in the tomatoes. Pour in the vegetable broth or water and bring to simmer. Then turn the heat down to low and let it cook gently slowly, uncovered, stirring occasionally
4. In the meantime place the dried porcini mushrooms in a bol with warm water to moisturize. Drain them and add them to the pan to saute.
5. At this point add the kale and cabbage, add salt and pepper if necessary, and over low flame cover with a lid.
6. Crack 1 egg into a small bowl. Use a spoon to make a small indentation in the soup, bring the bowl close to the surface of the simmering sauce, and carefully tip the egg into the well. Repeat with the remaining eggs, being careful not to situate the eggs too close together. Poach the eggs until the whites are cooked but the yolks are still soft and runny, 4 to 6 minutes. (Or, if you prefer your egg yolks firm, spoon some sauce over the top of the yolks.) You may need to increase the heat ever so slightly to keep the sauce gently simmering.
If you prefer, you can make the eggs separately in another pan
7. Finalization: Place a slice of bread at the bottom of each bowl. With a ladle, carefully scoop out the poached eggs one by one and place each on a slice of bread. Scoop out  soup and ladle it around the egg. The bread will soak up any excess liquid. Sprinkle each dish with grated cheese and let it sit for a minute or two before serving.
