Curry de Frango

 


Uma receita perfumada e prática para transformar o frango em um preparo diferente, com ares indianos. Para a mesa ficar completa, capriche na variedade de acompanhamentos: arroz basmati, chutney de manga e amendoim torrado.

 

Ingredientes

800 g a 1 kg de peito de frango cortado em cubos

1 lata de tomate pelado (com o líquido)

1 cebola picadinha

2 dentes de alho amassados

1 colher de sopa rasa de gengibre ralado

½ xícara de chá de água

Óleo de girassol ou amendoim

1 colher de sopa de curry

1 colher de chá de canela em pó

1 colher de chá de cominho

1 colher de chá de sementes de coentro moídas

1 pitada de pimenta-de-caiena

2 folhas de louro

1 pote de iogurte natural (170 g)

Sal a gosto

 

Modo de fazer

Em uma panela ao fogo médio, regue com o óleo e acrescente a cebola temperada com 1 pitada de sal. Refogue até murchar. Junte o alho, o gengibre e o louro e refogue por mais 1 minuto. Acrescente as especiarias e misture bem para perfumar.

Adicione a lata de tomate pelado (com o líquido), regue com a água e misture bem. Assim que ferver, abaixe o fogo e deixe cozinhar até o molho engrossar um pouco.

Tempere o frango com sal e adicione à panela. Deixe cozinhar no molho por mais uns 15 minutos, em fogo baixo, com a panela tampada, mexendo de vez em quando, até que esteja macio.

Desligue o fogo e acrescente o iogurte, aos poucos, mexendo delicadamente.

Sirva.

 




Chicken Curry

 

A fragrant and practical recipe for turning chicken into a different preparation, with Indian flair. For the table to be complete, take care of the variety of side dishes: basmati rice, mango chutney and roasted peanuts.

 

Ingredients

800 g to 1 kg chicken breasts cut into cubes

1 can peeled tomatoes (with liquid)

1 onion, finely chopped

2 cloves of crushed garlic

1 tablespoon grated shallow ginger

½ cup water

Sunflower or peanut oil

1 tablespoon curry

1 teaspoon ground cinnamon

1 teaspoon cumin

1 teaspoon ground coriander seeds

1 pinch cayenne pepper

2 bay leaves

1 bowl natural yogurt (170 g)

Salt to taste

 

Directions

In a saucepan over medium heat, drizzle with oil and add the onion seasoned with 1 pinch of salt. Sauté until wilted. Add the garlic, ginger and bay leaves and sauté for another 1 minute. Add the spices and mix well to perfume.

Add the can of peeled tomatoes (with the liquid), drizzle with water and mix well. As soon as it boils, turn the heat down and cook until the sauce thickens slightly.

Season the chicken with salt and add to the pan. Cook in the sauce for another 15 minutes, over low heat, with the pan covered, stirring occasionally, until it is tender.

Turn off the heat and add the yogurt, gradually, stirring gently.

Serve.

Frango Indiano à Jalfrezi



Serve: 4

Fizemos esse frango com base numa receita dos Vigilantes do Peso. Para os amantes de curry, recomendamos.

Ingredientes:
500 g de peito de frango cortado em cubos
Sal a gosto
Óleo Vegetal
Cominho em pó a gosto
Curry em pó a gosto
2 tomates sem pele picados
6 tiras de pimentão vermelho
Pimenta chilli cortada em tiras ou molho de pimenta tabasco a gosto (opcional)

Creme de pimentão:
Pimentão vermelho picado (cortar antes de picar umas 6 tiras do pimentão e reservar)
2 dentes de alhos amassados
1 cebola
1 pedaço de gengibre de cerca de 2 cm
4 colheres de sopa de água
Sal a gosto
Óleo vegetal

Modo de fazer:

Creme de pimentão:
Saltear no óleo os ingredientes do creme (menos a água). Baixar o fogo e refogar até o pimentão ficar crocante e a cebola cozida.
Bater o creme no liquidificador com 4 colheres de sopa de água e reservar.

Frango:
Temperar o frango com sal e saltear em um pouco de óleo até selar.
Adicionar os tomates picados e refogar até os tomates começarem a desmanchar.
Adicionar o creme de pimentão, o cominho, o curry, a pimenta (opcional) e as tiras de pimentão. Refogar por uns 2 minutos.

Servir com arroz e batatas ou como molho de uma massa.

Observação: se quiser fazer uma espécie de “estrogonofe” adicione iogurte natural e misture.









Indian Chicken Jalfrezi-Style

Serve: 4

We made this chicken based on a recipe from the Weight Watchers. For curry lovers, we recommend it.

Ingredients:
500 g chicken breast cut into cubes
Salt to taste
Vegetable oil
Cumin powder to taste
Curry powder to taste
2 tomatoes skinless chopped
6 strips of red bell pepper
Chilli pepper or tabasco to taste (optional)

Bell pepper Cream:
Chopped red bell pepper (cut before chopping a 6 strips and reserve)
2 cloves of crushed garlic
1 onion
1 piece of ginger about 2 cm
4 tablespoons water
Salt to taste
Vegetable oil

Directions:

Bell pepper Cream:
Saute the ingredients of the cream (except water) in the oil. Lower the heat and cook until the bell pepper is crispy and the onion is cooked.
Beat the cream in the blender with 4 tablespoons of water and set aside.

Chicken:
Season the chicken with salt and sauté in a little oil until sealed.
Add the chopped tomatoes and braise until the tomatoes begin to dismantle.
Add the bell pepper cream, cumin, curry, pepper (optional)  and bell pepper strips. Braise for about 2 minutes.

Serve with rice and potatoes or as a pasta sauce.

Note: if you want to make a kind of "stroganoff" add natural yogurt and mix.

Salada de Frango ao Curry com Penne



É uma salada de inspiração indiana muito saborosa, podendo servir como uma refeição após a praia.

Ingredientes:

4 xícaras de penne cozido na água e sal

2 xícaras de vagens francesas cozidas na água e sal
2 xícaras de frango cozido e desfiado (de preferência refogado, temperado com sal e pimenta do reino)
5 colheres de sopa de maionese
2 colheres de sopa de cebola picadinha
2 colheres de chá de curry em pó
1 colher de chá de semente de coentro em pó (pode usar coentro fresco picado a gosto)
2 colheres de sopa de amendoim ou castanha de caju torradas e picadas (opcional)

Modo de fazer:

Misturar todos os ingredientes e depois regar com um pouco de azeite de oliva.



Curried Chicken with Penne Salad

It is a salad of Indian inspiration very tasty, being able to serve a meal after the beach.

Ingredients:

4 cups penne cooked in water and sal

2 cups green beans, cooked in water and salt
2 cups shredded cooked chicken breast (braised with salt and black pepper)
5 tablespoons mayonnaise
2 tablespoon thinly sliced onion
2 teaspoons curry poder
1 teaspoon coriander seed powder (you can use chopped fresh coriander to taste)
2 tablespoons peanut or cashew nuts toasted and chopped (optional)

Directions:


Mix all the ingredients and then put a little olive oil.

Frango Indiano a Moda de Jalfrezi


Aqui no Rio de Janeiro o verão está começando a esquentar. Assim, resolvemos fazer um prato indiano antes que o calor não combine com comida picante.

Este frango, que é muito saboroso, foi baseado em uma receita dos Vigilantes do Peso, não sendo assim muito calórico.

Serve: 4 porções

Ingredientes:
1 kg de peito de frango cortado em cubos
2 cebolas picadas
¾ de pimentão vermelho picado (cortar também 4 tiras e reservar)
¾ de pimentão verde cortado em tiras
2 dentes de alho amassados
Gengibre ralado (pedaço pequeno)
3 a 4 colheres de sopa de água
Chilli, Curry e Cominho em pó (1 colher de chá de cada)
5 tomates picados sem sementes e sem pele
Sal a gosto

Modo de fazer:
1. Em uma frigideira antiaderente, untada com óleo vegetal, refogar as cebolas por 3 minutos.
2. Adicionar o pimentão vermelho picado, o alho, os tomates e o gengibre. Refogar até a cebola ficar transparente.
3. Em um liquidificador, bata esta mistura de cebola com a água até formar um creme. Temperar com sal. Reserve
4. Em uma frigideira em fogo alto, selar o frango temperado com sal.
5. Adicionar o pimentão verde e o vermelho em tiras, a pimenta chilli (opcional para quem não gosta de pimenta), o curry e o cominho. Depois de 2 minutos colocar a mistura feita no liquidificador.
6. Cozinhar em fogo baixo, com a panela tampada, até o frango ficar macio. Acertar o sal e servir







Indian Chicken Jalfrezi-Style

In Rio de Janeiro summer is starting to heat up. So, we decided to make an Indian dish before the heat does not match with spicy food.

This chicken, which is very tasty, was based on a recipe from the Weight Watchers, not being that much caloric.

Serves: 4

Ingredients:
1 kg chicken breast cut into cubes
2 chopped onions
¾ chopped red bell pepper (cut 4 strips and reserve)
¾ green bell pepper sliced into strips
2 cloves garlic, crushed
Grated Ginger (small piece)
3 to 4 tablespoons water
Chilli, Curry and Cumin powder (1 teaspoon each)
5 seedless and skinless chopped tomatoes
Salt to taste

Directions:
1. In a frying pan, greased with vegetable oil, sauté the onions for 3 minutes.
2. Add chopped red bell pepper, garlic, tomatoes and ginger. Braise until the onion is transparent.
3. In a blender, beat this onion mixture with water until it forms a cream. Season with salt. Reserve.
4. In a pan over high heat, seal the chicken seasoned with salt.
5. Add the green and red bell peppers in strips, the chilli powder (optional for those who do not like pepper), curry and cumin. After 2 minutes add the mixture made in the blender.

6. Cook over low heat, with the pan covered, until the chicken is tender. Hit the salt and serve

Peixe ao Curry a Moda de Goa


Esta receita é baseada num prato da culinária indiana da região de Goa, que coletamos há muito tempo. Infelizmente não anotamos o site porque na época não pensávamos em criar este blog.

Ingredientes

1 kg de filé de peixe
1 cebola fatiada
1/2 tomate fatiado
1 garrafa pequena de leite de coco
1/2 colher de chá de cominho em pó
1 colher de chá de pimenta do reino moída
1 colher de chá de curcuma
2 colheres de chá de curry
Molho de pimenta ou pimenta dedo de moça a gosto (usamos molho Tabasco)
Óleo vegetal
Sal e vinagre a gosto
Coentro fresco picado a gosto

Modo de fazer:

1.    Cortar os filés em pedaços
2.    Colocar o peixe numa marinada de sal e vinagre por 30 minutos
3.    Adicionar as especiarias ao leite de coco e bater no liquidificador (menos o molho de pimenta e o coentro).
4.    Sauté ou refogar a cebola e o tomate em óleo
5.    Adicionar a mistura de leite de coco.
6.    Adicionar o peixe e o molho de pimenta.
7.    Cozinhar em fogo baixo até o peixe ficar cozido.
8.    Quando desligar a panela adicionar o coentro
9.    Servir com arroz.
 



Fish Curry Goa-Style

This recipe is based on a dish from Indian cuisine of the Goa region(Yellow Fish Curry) that we collect a long time ago. Unfortunately we not annotated the recipe’s site because at this time we haven’t created this blog.

Ingredients

1 kg of fish fillet (we use Alaskan pollock)
1 sliced onion
1/2 sliced tomato
1 small bottle coconut milk
1/2 teaspoon cumin powder
1 teaspoon ground black pepper
1 teaspoon turmeric
2 teaspoon curry
Hot pepper sauce or chilli to taste (we use Tabasco sauce)
Vegetable oil
Salt and wine vinegar to taste
Chopped cilantro (fresh coriander) to taste

How to:

1. Cut the fillets into pieces
2. Put the fish in a marinade with salt and vinegar for 30 minutes
3. Add spices to coconut milk and beat in a blender (minus the pepper sauce and cilantro).
4. Sauté or braise the onion and tomatoes in oil
5. Add the coconut milk mixture.
6. Add the fish and pepper.
7. Cook over low heat until the fish is cooked through.
8. Turn off the heat and add the coriander
9. Serve with rice.

Arroz Basmati a Moda da Índia


O Arroz Basmati é um arroz de grãos longos originário do norte da Índia e do Paquistão. Possui sabor e aroma únicos, em função de um composto químico presente nos grãos. Existem diversas receitas para preparar o arroz, mas nesta postagem usaremos a receita constante do verso de sua embalagem.

Ingredientes:

1 ½ xícaras de arroz Basmati
2 colheres de sopa de óleo vegetal
1 (5 cm) peça de canela em pau
2 cardamoms verdes
2 cravos da Índia
2 colheres de sal ou a gosto
3 xícaras de água
1 cebola pequena finamente fatiada

Modo de fazer:

1. Colocar o arroz numa vasilha com bastante água. Deixar de molho por 20 minutos.
2. Aquecer o óleo numa panela em fogo médio. Adicionar a canela, o cardamom, os cravos e o cominho. Cozinhar mexendo por 1 minuto. Adicionar a cebola. Saltear a cebola até ela ficar transparente ou dourada, por cerca de 10 minutos.
3. Escorrer a água do arroz e colocá-lo na panela. Cozinhar mexendo por alguns minutos até ele começar a ficar brilhante ou levemente tostado. Adicionar o sal e a água.
4. Quando começar a ferver, tampar a panela e reduzir o fogo para baixo. Ferver por uns 15 minutos ou até o líquido for absorvido e o arroz estiver macio. Deixar descansar por 5 minutos. A seguir soltar o arroz com um garfo e servir.


Indian Style Basmati Rice

Basmati rice is a long grain rice originating of North India and Pakistan. Has unique flavor and smell, due to a chemical compound present in the grains. There are several recipes for preparing the rice, but in this post we will use the recipe on the back of packaging box.

Ingredients:

1 ½ cups basmati rice
2 tablespoons vegetable oil
1 (2 inches) piece cinnamon stick
2 pods green cardamom
2 whole cloves
2 teaspoon cumin
1 teaspoon salt or to taste
3 cups water
1 small onion, thinly sliced.

How to:

1. Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes.
2. Heat the oil in a large pot or saucepan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin. Cook and stir for about a minute, then add the onion. Sauté until the onion is golden brown, about 10 minutes.
3. Drain the water from the rice, and stir in the pot. Cook and stir the rice for a few minutes, until lightly toasted. Add salt and water to the pot, and bring to boil.
4. Cover and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed. Let stand for 5 minutes, then fluff with a fork before serving.

Batatas Coradas a Moda Indiana


Ingredientes:

Batatas cozidas em água e sal, cortadas em 2 ou 3 pedaços.

Temperos:
1 colher de chá de coentro em pó
1 pedaço (2 cm) de gengibre finamente fatiado
Uma pitada de chilli em pó.
1 ½ colher de chá de curry
1 ½ colheres de chá de cúrcuma
Sal a gosto

3 cebolinhas picadas, inclusive parte branca
2 colheres de sopa ou mais de óleo vegetal

Modo de fazer:

1. Numa frigideira, refogar os temperos no óleo, mexendo bem.
2. Acrescentar as batatas cozidas. Fritar primeiro um lado sem mexer, até dourarem.
3. Antes de virar as batatas, adicionar a cebolinha picada.
4. Virar as batatas e fritar do outro lado.
5. Tirar da frigideira e servir.






Fried Potatoes Indian Style

Ingredients: 

Boiled potatoes in salted water, cut into 2 or 3 pieces.

Seasonings:
1 teaspoon coriander powder
1 (2 cm) piece ginger, finely sliced
A pinch of chili powder.
1 .1/2 teaspoon curry
1 .1/2 teaspoon turmeric
Salt to taste

3 chopped chives, including white part
2 tablespoons or more vegetable oil

How to do:

1. In a skillet, sauté the spices in oil, stirring well.
2. Add the boiled potatoes. Fry first one side without moving, until golden brown.
3. Before turning the potatoes, add the chopped chives.
4. Turn the potatoes and fry the other side.

Galinhada a Moda Indiana


Esta galinhada difere das galinhadas de origem italiana e muito consumidas no sul do Brasil, pelo tipo de arroz e temperos usados.

Ingredientes:

3 coxas e sobre coxas de frango cortadas nas juntas, sem pele

Temperos:
2 colheres de chá de coentro em pó
1 colher de chá de cominho
1 colher de chá de páprica picante
Uma pitada de chili em pó ou a gosto
Molho de pimenta tabasco a gosto
Sal a gosto

½ cebola picada
3 alhos amassados
Limão
2 colheres de chá de orégano

Óleo vegetal

¾ de lingüiça calabresa fatiada

2 xícaras de arroz Basmati (arroz de origem Indiana)

1/2 lata de tomate (120 g)

Modo de fazer:

1. Numa frigideira dourar a lingüiça.
2. Temperar o frango com os temperos e deixar tomar gosto por 1 hora (nós usamos metade da mistura de temperos em pó)
3. Numa panela dourar o frango no óleo junto com o alho e a cebola.
4. Acrescentar a linguiça, pingar umas gotas de limão e adicionar o orégano.
5. Adicionar o arroz Basmati e mexer até o arroz ficar brilhante. Se o arroz grudar no fundo, pingar água e raspar o fundo da panela com a colher de pau.
6. Acrescentar 4 xícaras de caldo de frango e ½ lata de tomate amassado previamente. Acertar o sal e misturar.
7. Depois que ferver, abaixar o fogo, tampar a panela e cozinhar até a água secar.







 

Chicken with Rice Indian Style

This chicken and rice differs from the chicken and rice of Italian origin, and very consumed in the South of Brazil, by the type of rice and spices used.

Ingredients:

3 thighs and drumsticks cut in joints, skinless

Seasonings:
2 teaspoons coriander powder
1 teaspoon cumin
1 teaspoon hot paprika
A pinch of chili powder or to taste
Tabasco sauce to taste
Salt to taste

1/2 chopped onion
3 mashed garlic
Lemon
2 teaspoons oregano

Vegetable oil

3/4 sliced pepperoni sausage

2 cups Basmati rice (Indian rice)

1/2 can of tomatoes (120 g)

How to do:

1. In a skillet golden brown the sausage.
2. Season the chicken with the seasonings and let stay to take taste for 1 hour (we use half mixture of powdered spices)
3. In a saucepan golden brown the chicken in oil with the garlic and the onion.
4. Add the sausage, drip a few drops of lemon and add the oregano.
5. Add the Basmati rice and stir until the rice to be brilliant. If the rice stick to the bottom, dripping water and scrape the bottom of the pan with a wooden spoon.
6. Add 4 cups of chicken broth and tomato smashed previously. Hit the salt and mix.
7. After boiling, lower the heat, cover and cook until water dry.
