Tomate Cereja ao Balsâmico

Excelente aperitivo, saboroso, fácil e rápido de fazer, podendo ser servido com torradas. Pode ser utilizado também como uma bruschetta ou como um acompanhamento para carnes grelhadas.

Modo de fazer:

Pegue tomates cerejas frescos e regue com um fio de vinagre balsâmico. Nnão exagere caso contrário ficará muito ácido para comer. Então misture com mel ou uma pitada de açúcar, folhas de alecrim ou manjericão. Leve ao forno pré aquecido por cerca de 10 min. Ou no forno micro ondas por uns 2 a 3 minutos

 


Balsamic Cherry Tomato

Excellent aperitif, tasty, easy and quick to make, and can be served with toast. It can also be used as a bruschetta or a side dish to grilled meats.

Directions:

Take fresh cherry tomatoes and drizzle with balsamic vinegar. Don't overdo it, otherwise it will be too acidic to eat. Then mix it with honey or a pinch of sugar, rosemary leaves or basil. Bake in preheated oven for about 10 min. Or in the microwave

Arroz com Castanha de Caju

 


Neste Natal fizemos um arroz com castanha de caju para acompanhar o lombo de porco e o peru assado. Este arroz pode ser usado como acompanhamento para outros pratos fora do período das festas do final do ano, devendo ficar delicioso acompanhando um frango por exemplo.

Ingredientes:

Arroz cozido

 

Castanha de caju torrada, sem sal

Cebola ralada

Sal

Azeite de oliva


Modo de fazer:

Fazer o arroz do seu modo e deixar de lado.

Numa panela em fogo alto, colocar um pouco de azeite e saltear a castanha com a cebola temperadas com sal a gosto. Baixar o fogo, misturar o arroz cozido até ficar quente.

Nota: nós usamos 4 xícaras de chá de arroz cozido para 200 g de castanha de caju.

 

Rice with Cashew Nuts

This Christmas we made rice with cashew nuts as a side dish for pork loin and roast turkey. This rice can be used as a side dish to other dishes outside the end of the year festivities, and it should be delicious with chicken for example.

Ingredients:

Cooked rice

 

Roasted cashew nuts, unsalted

grated onion

Olive oil


Directions:

Make the rice your way and set aside.

In a pan over high heat, put a little olive oil and sauté the cashew nuts with the onion seasoned with salt to taste. Lower the heat, stir in the cooked rice until warm.

Note: we use 4 cups of cooked rice for 200 g of cashew nuts.

Polenta com Ragu de Cogumelo

 


Um prato típico italiano apresentado numa versão vegana.

RENDIMENTO: 4 PORÇÕES

 

INGREDIENTES

PARA O RAGU

450 g de cogumelos (usamos uma mistura de Paris e Porcini)

azeite extra virgem

½ cebola picada fina

1 dente de alho, em fatias bem finas

1 colher de chá. orégano

1 folha de louro

Sal e pimenta do reino a gosto

2 colheres de chá. farinha de trigo

1/2 xícara de vinho tinto

PARA A POLENTA

3 xícaras de água

2 xícaras de fubá de milho

1 colher de sopa. de manteiga

2 colheres de sopa de leite

Sal

 

INSTRUÇÕES

Em uma frigideira grande, aqueça o azeite em fogo médio. Adicione as cebolas e cozinhe, mexendo, até amolecer, 3 a 4 minutos. Adicione o alho e cozinhe até amolecer, 2 minutos. Adicione os cogumelos, o orégano, a folha de louro, o sal e a pimenta. Aumente o fogo para médio-alto e. cozinhe, mexendo ocasionalmente, até os cogumelos ficarem macios e o líquido evaporar, 4 a 5 minutos.

Adicione a farinha de trigo e cozinhe, mexendo sempre, 2 minutos. Adicione o vinho e aumente o fogo para alto. Cozinhe até que o líquido tenha reduzido, raspando os pedaços do fundo da panela. Cozinhe em fogo médio-alto até que o caldo fique espesso e saboroso, de 5 a 10 minutos. Desligue o fogo e retire a folha de louro.

Para fazer a polenta: Enquanto isso, em uma panela pesada, leve a água para ferver. Adicione 1 colher de chá de sal e vá adicionando a polenta aos poucos. Reduza o fogo para baixo e cozinhe, mexendo sempre com uma colher de pau, até engrossar ao seu gosto, cerca de 10 a 15 minutos. Junte a manteiga e o leite até derreter. Sirva imediatamente com ragu de cogumelos por cima.





Polenta with Mushroom Ragu

INGREDIENTS

FOR RAGU

450 g mushroms (we use a mix of Paris and Porcini)

1 bay leaf

2 tsp. all-purpose flour

1/2 c. red wine

2 c. polenta or corn grits

1 tbsp. butter    

2 tbsp milk

 Salt

 

DIRECTIONS

In a large skillet, heat oil over medium heat. Add onions and cook, stirring, until softened, 3 to 4 minutes. Add garlic and cook until softened, 2 minutes. Add mushrooms, oregano, bay leaf, salt and pepper. Increase heat to medium-high and. cook, stirring occasionally, until mushrooms are tender and liquid is evaporated, 4 to 5 minutes.

Add flour and cook, stirring constantly, 2 minutes. Add wine and increase heat to high. Cook until liquid has reduced to nearly a glaze, scraping any bits from the bottom of the pan. Cook over medium-high until broth is thick and flavorful, 5 to 10 minutes. Remove bay leaf.

To make polenta: Meanwhile, in a heavy saucepan, bring water to a boil. Add 1 teaspoon salt and gradually whisk in polenta. Reduce heat to low and cook, stirring often with a wooden spoon, until thickened to your liking, about 10 to 15 minutes. Stir in butter and milk until melted. Serve immediately topped with mushroom ragu.

Suflê de Couve flor com Cenoura

 


Como esse suflê foi feito apenas com as claras dos ovos, constitui importante fonte de albumina. É também um prato sem lactose e glúten.

 

Ingredientes:

2 cenouras

1 couve flor pequena

 

1 cebola

2 dentes de alho

1/4 de pimentão verde

 

Modo de fazer:

1. Temperar a cenoura e a couve flor com cominho, louro e pimenta do reino. triturar num processador de de alimentos. Reservar

2. Passar no processador a cebola, o alho e o pimentão. Refogar no azeite de oliva. Adicionar a couve flor e a cenoura trituradas. Continuar refogando a mistura. Adicionar ½ xícara de água e refogar até a água praticamente secar. Deixe esfriar

3. Bater na batedeira 5 claras de ovo até virarem claras em neve. Misturar com uma colher a mistura reservada.

4. Colocar tudo num refratário e salpicar queijo parmesão por cima.(opcional)

5. Assar em forno alto até ficar dourado.

 

Cauliflower with Carrot Souffle

 

As this souffle was made only with egg whites, it is an important source of albumin. It is also a lactose and gluten free dish.

 

Ingredients:

2 carrots

1 small cauliflower

 

1 onion

2 garlic cloves

1/4 of green pepper

 

Directions:

1. Season the carrot and cauliflower with cumin, bay leaf and black pepper. crush in a food processor. Reserve

2. Crush the onion, garlic and pepper in the food processor. Braise in olive oil. Add the crushed cauliflower and carrot. Continue to braise the mixture. Add ½ cup of water and sauté until the water is practically dry. Let cool

3. Beat 5 egg whites in a mixer until they become snow whites. Mix the reserved mixture with a spoon.

4. Place everything in a refractory and sprinkle Parmesan cheese on top. (optional)

5. Bake in a high oven until golden.

Legumes Assados

 


Quais legumes para assar

Legumes de raiz - como batata, nabo, batata-doce e cenoura - são velhos substitutos quando se trata de assar, é claro, mas dê uma olhada em sua gaveta de legumes e você encontrará todos os tipos de candidatos para assar - de crucíferas como brócolis e Couves de Bruxelas, a surpresas como abobrinha, cebola, pimentão e repolho. UMA RECEITA GERAL

INSTRUÇÕES

NOTA

1. Enfeitar e servir - polvilhe com salsa e sirva imediatamente!

2. Alho esmagado - Este método de abrir o alho amassado libera o sabor do alho nos vegetais enquanto eles assam, mas mantém o alho inteiro para que a) não queime como o alho picado; eb) você espreme o alho torrado lentamente e comê-lo - é tão bom!

3. Ervas – pode usar sálvia e tomilho, que são duas ervas que funcionam bem para conferir um sabor sutil quando torradas. Por ser uma erva mais resistente, o alecrim também funcionaria bem aqui.

Ervas mais delicadas, como orégano, cebolinha, manjerona, manjericão, etc., não resistem ao cozimento no forno. Em vez disso, polvilhe os vegetais depois de assados.

Opção de ervas secas - as ervas secas funcionam bem também, mas não acrescentam sabor da mesma forma que as ervas frescas. Para usar ervas secas, basta adicionar ao misturar com sal e pimenta.

 

NOSSA RECEITA

Na nossa receita seguimos os passos acime e usamos os legumes:

Mini batatas, mini cebolas, abobrinhas, batata-doce, tomate cereja e cenoura.

Untamos os legumes com azeite extra virgem e temperamos com sal, pimenta do reino e folhas de manjericão.

Assamos primeiro os legumes duros em forno a 220º C. Mais ou menos na metade do tempo de cozimento desses legumes adicionamos os legumes mais macios.

 








Roast Vegetables

What Vegetables to Roast

Root vegetables — like potatoes, parsnips, sweet potatoes, and carrots — are old standbys when it comes to roasting, of course, but take a look through your crisper drawer and you’ll find all sorts of roasting candidates — from crucifers like broccoli and Brussels sprouts to surprises like zucchini, onions, bell peppers, and cabbage. Even tomatoes can be roasted.

If you’re not sure if a particular vegetable can be roasted, my recommendation is to just give it a try. It might not end up being your favorite way to eat that vegetable, but it’s definitely worth the experiment to find out.

 

Don’t Skimp on the Oil

Once you’ve cut your vegetables down into bite-sized pieces, toss them with some good-tasting oil. Use enough to give the vegetables a slick, glossy coating, but not so much that you have puddles in the bottom of your bowl — a tablespoon or two will usually get the job done. Not only does the oil help the vegetables cook more evenly and crisp up in the oven, but it also adds a rich flavor that makes roasted vegetables irresistible.

I usually use a mild olive oil when roasting vegetables, but you could also use coconut oil, avocado oil, or any other oil you like to use. Also, I usually toss the vegetables with my hands so I can rub the oil into the vegetables and make sure they’re evenly coated.

Last but not least, toss your vegetables with some salt. You can add black pepper or any other seasonings, as well. Again, be generous, but not excessive — add enough salt and other seasonings so that each piece of vegetable gets a little.

Also, make sure your oven is good and hot before you put the vegetables in to roast. I think around 425°F is ideal for roasting most vegetables, although you can adjust up or down as you prefer

 

3 Ways to Roast Mixed Vegetables

If you’d like to make a mixed-vegetable side dish, you have three options.

  1. Roast vegetables individually: First, and easiest, you can roast the individual vegetables on separate trays and combine them after roasting. This lets you monitor how quickly each vegetable is cooking and pull each vegetable from the oven as it’s done.
  2. Pair “vegetable friends”: Second, you can pair together “vegetable friends” — ones that roast at roughly the same rate. For instance, you could roast cauliflower and broccoli together, or butternut squash with potatoes. Combine these on the same baking sheet and roast them together. If the baking sheet is getting crowded, split them between two sheets.
  3. Roast in stages: Third, you can add different vegetables to the baking sheet in stages — start roasting the hardest, longest-cooking vegetables first, and then add softer, quicker-cooking vegetables later on. If the baking sheet starts to get full, split the vegetables between two pans so you don’t crowd them. Aim to have all the vegetables finish roasting around the same time, and remember: A little extra roasting time is unlikely to hurt.

General Roasting Times for Vegetables

Cooking times are for roasting vegetables at 425°F (220ºC).

  • Root vegetables (beets, potatoes, carrots): 30 to 45 minutes, depending on how small you cut them
  • Winter squash (butternut squash, acorn squash): 20 to 60 minutes, depending on how small you cut them
  • Crucifers (broccoli, cauliflower, Brussels sprouts): 15 to 25 minutes
  • Soft vegetables (zucchini, summer squash, bell peppers): 10 to 20 minutes
  • Thin vegetables (asparagus, green beans): 10 to 20 minutes
  • Onions: 30 to 45 minutes, depending on how crispy you like them
  • Tomatoes: 15 to 20 minutes

A General recipe

INGREDIENTS

  • 1 to 2 pounds  any vegetables
  • 1 tablespoon  olive oil
  • 1 teaspoon  Salt
  • 1/4 teaspoon  freshly ground black pepper

INSTRUCTIONS

  1. Heat the oven to 425°F. Arrange a rack in the middle of the oven and heat to 425°F. Meanwhile, prep the vegetables.
  2. Chop up the vegetables. Peel the vegetables if desired, then cut into uniform pieces so they cook evenly. Smaller pieces will cook more quickly; larger pieces will take a bit longer to cook. If your vegetables still have some moisture after washing, be sure to pat them as dry as possible; the drier the vegetable, the better it will roast.
  3. Toss the vegetables with olive oil and season. Transfer the vegetables to a large bowl. Add the oil, salt, and pepper and toss to combine. Add more oil if the vegetables still look dry or don't seem evenly coated.
  4. Spread onto a baking sheet. Spread the vegetables out on a rimmed baking sheet, in an oven-proof skillet, or in a baking dish. Make sure they are in a single layer with a little space in between. If they are too crowded, the vegetables will steam instead of roast -- use 2 baking sheets if needed instead.
  5. Estimate your cooking time. In general, softer vegetables, like green beans and cauliflower, will cook in 10 to 20 minutes, and tough, hard vegetables, like winter squash and potatoes, will take 30 minutes or longer. Large pieces will also take longer to cook than smaller pieces.
  6. Roast the vegetables until tender. Place the vegetables in the oven and begin roasting. Check and stir the vegetables every 10 to 15 minutes. Continue roasting until the vegetables are easily pierced with a fork or knife and they are showing crispy, charred bits at the tips and edges.
  7. Serve. Transfer the vegetables to a serving dish and taste; sprinkle with more salt or pepper if needed.

NOTES

Storage: Leftovers can be refrigerated in an airtight container for up to 5 days.

1.   Garnish & serve – Sprinkle with parsley and serve immediately!

2.                  Smashed Garlic – This method of smashing opening garlic releases garlic flavour into the vegetables as they roast but keeps the garlic whole so a) it won’t burn like minced garlic does; and b) you get to squeeze out the slow roasted garlic and eat it – it’s so good!!

3.                  Herbs – I’ve used Sage and thyme here which are two herbs that do well to impart subtle flavour when roasted. Being a hardier herb, rosemary would also work well here.

More delicate herbs like oregano, chives, marjoram, basil etc, can’t withstand oven cooking. Instead, sprinkle over the vegetables once roasted.

Dried herbs option – Dried herbs will work just fine too, but they won’t add flavour in the same way fresh herbs do. To use dried herbs, just add when tossing with salt and pepper.

 

OUR RECIPE

In our recipe, we follow the steps above and use the vegetables:

Mini potatoes, mini onions, zucchinis, sweet potatoes, cherry tomatoes and carrots.

We grease the vegetables with extra virgin olive oil and season them with salt, black pepper and basil leaves.

We first roast the hard vegetables in an oven at 220º C. About halfway through the cooking time of these vegetables we add the softer vegetables.

Batatas com Limão e Manjericão

 


Receita baseada numa receita da chef Giada De Laurentis

Nós usamos nessa receita o caldo básico de galinha que mostramos em uma postagem anterior. Se preferir pode usar um caldo comprado pronto.

 

Serve: 4

 

Ingredientes:

12 batatinhas

2 xícaras de caldo de galinha

suco de 1 ou 2 limóes

2 colheres de sopa de azeite de oliva extra virgem

1 colher de chá de sal ou a gosto

½ colher de chá de pimenta do reino

 

1 colher de chá de casca de limão ralada (zest)

1 colher de sopa de folhas de manjericão picadas

 

Modo de fazer:

Coloque as batatas e os demais ingredientes numa panela, a exceção dos dois últimos. Deixe ferver em fogo médio-alto. Reduza o fogo para baixo com a panela tampada até as batatas ficarem macias, cerca de 20 a 25.

Drene as batatas e coloque num prato de servir. Regue com um fio de zeite. Adicione as raspas da casca de limão e o manjericão picado. Misture

 




Lemon-Basil Potatoes

Recipe based from a recipe of Giada De Laurentiis

 

  • Yield: 4 servings

 

Ingredients

12 baby potatoes,

2 cups low-sodium chicken stock

fresh lemon juice of 1 or 2 lemos,

2 tablespoons extra-virgin olive oil

1 teaspoon salt, or to taste

1/2 teaspoon freshly ground black pepper

 

1 teaspoon lemon zest

1 tablespoon chopped fresh basil leaves

 

Directions

WATCH

Put the potatoes and other ingredients in a pan, except for the last two. Bring to a boil over medium-high heat. Reduce the heat, cover and simmer until the potatoes are tender, about 20 to 25 minutes.

Drain the potatoes and place in a serving bowl. Drizzle with olive oil. Add the lemon zest and basil. Toss well and garnish with alitle of chopped basil.

Berinjela e Pimentão Refogados com Vinagre Balsâmico

 


Este prato pode ser servido como um acompanhamento ou como um aperitivo ou como um prato vegetariano sobre arroz. Como aperitivo pode ser servido quente ou frio com torradas.

Ingredientes:

1 berinjela média picada a julienne

Pimentão picado a julienne a gosto (verde, vermelho e amarelo)
2 cm de gengibre fatiado em tiras finas
1 dentes de alho esmagado
2 colheres de sopa de vinagre balsâmico

2 colheres de sopa de vodka
1 colher de chá de açúcar
1 xícara de água ou de caldo de legumes (sem sal)
2 colheres de chá de orégano

1 colher de chá de sementes de coentro moído
Óleo vegetal (nós usamos óleo de girassol)

Modo de fazer:
Saltear o gengibre, o alho e o coentro em um pouco de óleo, numa panela. Adicionar a berinjela e o pimentão. Temperar com sal. Dourar gentilmente (5 a 10 minutos).
Adicionar a mistura de vinagre balsâmico, vodka, açúcar, oregano e água. Ferver em fogo médio-baixo, com a panela tampada até a berinjela e o pimentão ficarem cozidos.

Pouco antes de ficar no ponto destampe para secar o molho ligeiramente.
Esta receita pode ser guardada vários dias no refrigerador.

 




Braised Eggplant and Bell Pepper with Balsamic Vinegar

This dish can be served as an accompaniment or as an appetizer or as a vegetarian dish over rice. As an aperitif, it can be served hot or cold with toast.

Ingredients:

1 medium chopped eggplant

Bell Pepper, chopped to taste (green, red and yellow)

2 cm ginger sliced into thin strips

1 crushed garlic clove

2 tablespoons balsamic vinegar

2 tablespoons vodka

1 teaspoon sugar

1 cup water or vegetable broth (without salt)

2 teaspoon oregano

1 teaspoon ground coriander

Vegetable oil (we use sunflower oil)

 

Directions:

Saute the ginger. Garlic and coriander in a little oil in a pan. Add eggplant and bell pepper. Seasoning with salt. Gently brown (5 to 10 minutes).

Add the mixture of balsamic vinegar, vodka, sugar, oregano and water. Simmer over medium-low heat, with the pan covered, until the eggplant and bell peppers are cooked through.

Just before getting done uncapped the pan to dry sauce slightly.

This recipe can be kept in the refrigerator for several days.
