Galinha Caipira com Milho e Couve

 


Esse prato, típico da culinária brasileira, me lembra da minha infância durante as férias na fazenda do meu avô. Vovó fazia com a galinha cortada nas juntas, cujas partes consideradas mais gostosas eram disputadas através de jogos entre os 6 netos. Naquela época a galinha era feita com a pele e refogada em banha de porco.

Elegi este prato simples e saboroso para homenagear todas a mães no seu dia.

 

Ingredientes

  • 1 kg de sobrecoxas sem pele + 2 drumetes com pele
  • 2 a 3 espigas de milho verde cortadas em 4  pedaços
  • 1 ou 2 folhas de couve rasgadas
  • 1 colher de chá de açafrão da terra (cúrcuma)
  • 1 colher de chá de colorau
  • Sal e pimenta do reino
  • 2 folhas de louro
  • 1 ramo de alecrim
  • 1 colher de sopa de vinagre de vinho
  • 2 dentes de alho amassados
  • 1/2 cebola picada
  • 1 xícara de cheiro verde (cebolinha e salsinha)
  • Óleo vegetal o quanto baste.

 

Modo de Preparo

1. Tempere as sobrecoxas com sal, pimenta do reino e vinagre.

2. Salteie as sobrecoxas em óleo vegetal, selando os pedaços. Se necessário ir pingando água.

3. Acrescente a cebola e depois o alho. Salteie

4.Adicione um pouco de água, o açafrão, o colorau, as folhas de louro e o ramo de alecrim. Raspe o fundo da panela e mexa.

5. Adicione a água até cobrir as sobrecoxas, coloque o milho, abaixe o fogo e tampe a panela. Deixar cozinhando cerca de 30 minutos ou até notar que o frango já está bem mole e o milho bem cozido (teste com um garfo).

6. Pouco antes de desligar o fogo adicione a couve rasgada e o cheiro verde.

 


Free-range Chicken with Corn and Kale

 

This dish, typical of Brazilian cuisine, reminds me of my childhood while on vacation at my grandfather's farm. Grandma made it with the chicken cut into the joints, whose parts considered the most delicious were played through games between the 6 grandchildren. At that time the chicken was made with the skin and sautéed in lard.

I chose this simple and tasty dish to honor all mothers on their day.

 

Ingredients

• 1 kg skinless thigs + 2 wing drumsticks with skin

• 2 to 3 ears of green corn, cut into 4 pieces each

• 1 or 2 torn kale leaves

• 1 teaspoon turmeric

• 1 teaspoon Sweet paprika

• Salt and black pepper

• 2 bay leaves

• 1 sprig rosemary

• 1 tablespoon wine vinegar

• 2 crushed garlic cloves

• 1/2 chopped onion

• 1 cup parsley and chives chopped

• Vegetable oil as much as you need.

 

Directions

1. Season the thighs with salt, pepper and vinegar.

2. Saute the thighs in vegetable oil, sealing the pieces. If necessary, add a litle water.

3. Add the onion and then the garlic. Saute

4.Add a little water, Turmeric, paprika, bay leaves and rosemary sprig. Scrape the bottom of the pan and stir.

5. Add water to cover the thighs, add the corn, lower the heat and cover the pan. Let it cook for about 30 minutes or until you notice that the chicken is already soft and the corn is well cooked (test with a fork).

6. Just before turning off the heat, add the torn kale and the parsley and chive.

Moquequinha a Ipanema Pitanga

 


Uma moqueca de preparo rápido para duas pessoas, simples e fácil de fazer.

 

Serve: 2

 

Ingredientes:

2 filés de peixe (nós usamos tilápia)

Sal, pimenta tabasco e coentro seco a gosto

Pimentão vermelho e amarelo

Cebola

Tomates cerejas cortados ao meio

2 colheres de sopa de leite de coco

Azeite de oliva

 

Modo de fazer:

1. Temperar os filés de peixe com sal, pimenta e coentro a gosto.

2. Colocar os filés num refratário e regar com um pouco de azeite de oliva.

3. Cortar em rodelas os pimentões e a cebola. Cortar ao meio as rodelas e colocar por cima dos filés.

4. Adicionar as metades de tomate cereja e regar com o leite de coco.

5. Assar em forno alto por cerca de 15 minutos

 





“Moquequinha” Ipanema Pitanga-Style

 

A quick-way to-prepare a moqueca for two people, simple and easy to make.

 

Serves: 2

 

Ingredients:

2 fish fillets (we use tilapia)

Salt, Tabasco pepper and dried coriander to taste

Red and yellow bell pepper

Onion

halved cherry tomatoes

2 tablespoons coconut milk

Olive oil

 

Directions:

1. Season the fish fillets with salt, pepper and coriander to taste.

2. Place the fillets in a refractory dish and sprinkle with a little olive oil.

3. Cut the bell peppers and onion into slices. Cut the slices in half and place on top of the fillets.

4. Add the cherry tomatoes halves and sprinkle with the 2 tablespoon of coconut milk.

5. Bake in a high oven for about 15 minutes

Paçoca de Carne

 


A paçoca de carne seca é um prato que se encontra em quase todo o Brasil, herança da tradição alimentar dos índios, que tinham como base da alimentação a mandioca. Este prato é ainda hoje quase igual ao original, que consistia em uma farofa feita com carne ou peixe socados no pilão com farinha de mandioca. A palavra “paçoca” deriva de “pa’soka”, que na língua Tupi significa esmigalhar, pilar no pilão.

A difusão da receita se deu a partir do séc. XVII com as caravanas que transportavam produtos para abastecer as regiões centrais do país. Durante viagens longas por caminhos precários o “tropeiro”,  preparava as suas refeições com ingredientes muito resistentes, adequados ao transporte nas tropas de animais, de fácil preparo e de grande valor nutritivo, como a farinha de mandioca e a carne seca. Existem inúmeras versões desta receita preparadas com diferentes tipos de carnes, mas sempre acrescidas de farinha de mandioca, de farinha de milho ou das duas juntas.

A receita apresentada é um aproveitamento de sobras.

 

Ingredientes:

Carne Assada desfiada e molho ferrugem do preparo desta carne

Farinha de mandioca

½ cebola picada

Óleo de girassol

 

Modo de fazer:

Numa frigideira com óleo, refogar a cebola até ficar transparente. Adicionar a farinha de mandioca e, sempre mexendo, torrá-la (dourar)

Adicionar a carne desfiada e misturar bem.

 




Beef “Paçoca”

 

The jerked beef “paçoca” is a dish that is found in almost all of Brazil, inheritance of the food tradition of the Indians, who had manioc as their food base. This dish is still almost identical to the original, which consisted of a farofa made with meat or fish pounded in a pestle with manioc flour. The word “paçoca” derives from “pa’soka”, which in the Tupi language means to crumble, pillar in the pestle.

The diffusion of the recipe took place from the 17th century onwards. with the caravans that transported products to supply the central regions of the country. During long journeys on precarious roads, the “tropeiro” prepared his meals with very resistant ingredients, suitable for transporting animals in troops, easy to prepare and of great nutritional value, such as manioc flour and dried meat. Ingredients:

Shredded Well Done Roast Beef of Eye Round and Sauce from the preparation of this beef

Cassava flour

½ onion chopped

Sunflower oil

 

Directiions:

In a skillet with oil, sauté the onion until translucent. Add the manioc flour and, always stirring, toast it (golden)

Add the shredded meat and mix well.

Escondidinho de Frango com Inhame

 




Serve: 3

Ingredientes:

Picadinho de frango:

1/2 peito de frango, sem osso, picado em cubos

1 cebola picada

1 tomate sem pele picado

1 talo pequeno de aipo picado

1 folha de louro

Sal, páprica picante, cominho e pimenta do reino a gosto

Molho inglês a gosto

Salsa picada

Azeite de oliva

 

Purê de inhame:

6 inhames picados grandes

Sal

 

Modo de fazer:

Picadinho de frango: Temperar o frango e refogar todos os ingredientes no azeite de oliva. Quando estiver macio colocar a salsa e misturar.

Purê de inhame: cozinhar o inhame em água com sal. Quando estiver macio bater no liquidificador. Voltar o purê para a panela e, sempre mexendo engrossar até ver o fundo da panela

Montagem forrar o prato de servir com o purê. Colocar o recheio (picadinho) e cobrir com a oura metade do purê.

Esquentar no forno na hora de servir.

 










Chicken and Yam “Escondidinho” (hidden)

 

Serves: 3

Ingredients:

Chicken Stew:

1/2 chicken breast, boneless, diced

1 chopped onion

1 chopped skinless tomato

1 small celery stalk, chopped

1 bay leaf

Salt, spicy paprika, cumin and black pepper to taste

Worcestershire sauce to taste

Chopped parsley

Olive oil

 

Mashed Yams:

6 chopped yams

salt

 

Directions:

Chicken stew: Season the chicken and sauté all ingredients in olive oil. When it is tender, add the parsley and mix.

Yam puree: cook the yam in salted water. When it is soft, beat it in a blender. Return the puree to the pan and, always stirring, thicken until you see the bottom of the pan.

Assembly: line the serving plate with the half pf puree. Place the stuffing (Chicken stew) and cover with the other half of the puree.

Heat in the oven before serving.

Moqueca de Peixe a Ipanema Pitanga

 



Parabéns a todos os papais. No próximo domingo dia 8 de agosto é o Dia dos Pais. Assim, estamos sugerindo para festejar esse dia uma deliciosa moqueca de peixe.

No Brasil existem diversas receitas de moqueca. As mais famosas são a baiana e a capixaba. A primeira leva azeite de dendê e leite de coco. Na segundo os temperos são refogados com urucum (colorau) e leva apenas o azeite de oliva.

A receita mostrada a seguir é a nossa receita, leva azeite de oliva e leite de coco.

Ingredientes:

1,1 kg de badejo cortado em postas (ou qualquer outro peixe de carne firme e branca como: garoupa, cherne, dourado e a pescada amarela que é muito usada no Nordeste)

1 lata (400 g) de tomates pelados

1 tomate grande fatiado em rodelas

1 cebola sendo metade picada e a outra metade fatiada

1 pimentão verde sendo metade picado e metade fatiado (pode usar pimentão vermelho também)

3 dentes de alho amassados

1 garrafinha de leite de coco

Salsa picada

Sal

Pimenta (tabasco ou outra bem picante)

Azeite de oliva

1 xícara de caldo de peixe (opcional, pois pode usar água)


Modo de fazer:

1. Refogar no azeite o alho, a cebola picada e o pimentão picado.

2. Adicionar o tomate pelado com o líquido e o caldo de peixe. Refogar 1 a 2 minutos.

3. Adicionar o peixe temperado com sal, o tomate, a cebola e o pimentão fatiados em camadas alternadas com as postas de peixe.

4. Tampar a panela, baixar o fogo e cozinhar até o peixe ficar cozido sem desmanchar.

 







Fish Moqueca Ipanema Pitanga-Style

Congratulations to all dads. Next Sunday August 8th is Father's Day. So, we are suggesting to celebrate this day a delicious fish moqueca, a kind of fish stew.

In Brazil there are several recipes for moqueca (a brazilian fish stew). The most famous are the Bahian and Capixaba (from Bahia and Espírito Santo States). The first takes palm oil and coconut milk. In the second, the spices are sautéed with urucum (a brazilian corante of food) and take only olive oil.

The recipe shown below, which is our recipe, takes olive oil and coconut milk.

Ingredients:

1.1 kg whiting cut into steaks (or any other firm and white fish such as: grouper, mahi mahi and yellow hake that is widely used in the Northeast)

1 can (400 g) peeled tomatoes

1 large tomato sliced

1 onion being half chopped and the other half sliced

1 green bell pepper being half chopped and half sliced (you can use red bell pepper too)

3 crushed garlic cloves

1 small bottle coconut milk

Chopped parsley

salt

Pepper (tabasco or other very spicy)

Olive oil

1 cup of fish stock (optional, as you can use water)

 

Directions:

1. Sauté the garlic, the chopped onion and the chopped pepper in the oil.

2. Add the peeled tomato with the liquid and the fish stock. Braise 1 to 2 minutes.

3. Add the fish seasoned with salt, the tomato, the onion and the bell pepper sliced in alternating layers with the fish slices.

4. Cover the pan, lower the heat and cook until the fish is cooked without breaking up.

Peixada Pernambucana

 


A Peixada Pernambucana, feito o próprio nome diz, é um prato típico do Estado de Pernambuco. É uma variação do cozido português, onde as carnes são substituídas pelo peixe.

A receita a seguir é encontrada em dezenas de sites de culinária na Internet. É incrível que todos os sites mantenham as mesmas quantidades dos ingredientes, sem nenhuma alteração, inclusive em relação a uma omissão ou erro da receita, que não menciona a adição de caldo ou água. O prato tem que ter caldo, pois é uma espécie de cozido.

Apesar disso, fizemos esta receita, adicionando caldo e mudando as quantidades, para ver se dava certo. A ciência para a receita dar certo, ou seja, que o peixe e os legumes fiquem cozidos ao mesmo tempo está no tamanho dos legumes que vão para a panela.

Ingredientes:

1,200 kg de postas de peixe (nós usamos postas de dourado)

2 cenouras cortadas em quatro

2 chuchus cortados ao meio no sentido do comprimento

3 batatas cortadas em quatro

3 mandioquinhas (batatas baroa) pequenas cortadas ao meio

1 pimentão cortado em rodelas

2 cebolas cortadas em rodelas grossas

2 tomates cortados em rodelas grossas

Coentro picado

Azeite de oliva

2 a 3 xícaras de caldo de peixe quente

Sal e pimenta do reino (ou molho de pimenta), a gosto

2 ovos cozidos partidos ao meio (opcional)

 

Caldo de Peixe:

Cabeça e rabo do peixe

Azeite de oliva

½ cebola picada

½ tomate picado

½ pimentão picado

Coentro picado

Salsa e cebolinha picadas

3 xícaras de água quente

 

Modo de fazer:

Caldo do peixe:

Primeiro é preciso fazer o caldo que será usado no peixe e no pirão. Refogar a cabeça e o rabo do peixe no azeite. Acrescentar a cebola, o tomate e o pimentão. Acrescentar a água. Depois que a água ferver e o peixe estiver cozido, acrescentar coentro, cebolinha e salsa a gosto. Reservar.

Observação: o caldo para fazer o Pirão deve ser coado.


Peixada:

Em uma panela larga arrumar metade de todos os legumes. Temperar com sal, pimenta, coentro picado e regue com azeite. Por cima, colocar fatias de tomate, cebola e pimentão. A seguir, colocar as postas do peixe e temperar da mesma maneira. Fazer outra camada com o restante dos legumes e colocar mais fatias de tomate, cebola e pimentão. Temperar novamente com sal, pimenta, coentro e azeite.

Levar ao fogo baixo com a panela tampada. Assim que começar a cozinhar, colocar o caldo de peixe quente e aumentar o fogo para médio. Cozinhar por aproximadamente 20 minutos ou até os legumes ficarem macios.

Uma outra maneira de fazer a Peixada Pernambucana é cozinhar o peixe, depois de temperado, no caldo. Nesse caso, o caldo não deve ser coado e temperado com sal. O tomate, a cebola e o pimentão devem ser picados em quatro. Depois, acrescentar ao peixe e ao caldo os ingredientes já cozidos: cenoura, batata, chuchu e os ovos. Para finalizar, uma porção de cheiro verde e coentro. Regar com azeite extra-virgem.

Arrumar os legumes, o peixe e os ovos cozidos em uma travessa aquecida e servir com Pirão de Peixe e Arroz.

Nós fizemos o Pirão de Peixe com 1 xícara do caldo de peixe (ver receita em outra postagem).

 




Fish Stew Pernambucan-Style

 

Ingredients:

1.200 kg fish steaks

2 carrots chopped in four

2 chayotes cut in half lengthways

3 potatoes chopped in four

3 small parsnips cut in half

1 green bell pepper sliced into rounds

2 onions sliced into rounds

2 tomatoes sliced into rounds

Fresh coriander chopped

Olive oil

2 or 3 cups hot fish stock

Salt and black pepper (or tabasco) to taste

2 cooked eggs cut in half

 

Fish stock:

Head and tail of the fish

Olive oil

½ onion, chopped

½ tomato, chopped

½ green bell pepper, chopped

Coriander chopped

Parsley and chive chopped

3 cups hot water

 

Ditections:

 

Fish stock:

First we made fish stock to use in the fish stew and to make the Pirão (Mush of Fish). Sauté head and tail of fish in olive oil. Add onion, tomato and pepper. Add water. After water is bubbling and fish is cooked, add coriander, parsley and chive. Reserve.

Observation: strain only the stock to make de mush of fish.

Fish stew:

In a large pan arrange half of all vegetables (carrot, chayote, potato and parsnip). Season with salt, pepper, chopped coriander and olive oil. Top with a layer of tomatoes, onions and green bell pepper. Then, add the fish steaks and season the same way. Make a layer with remaining vegetables. Top with more slices of tomato, onion and green bell pepper. Season with salt, pepper, chopped coriander and olive oil.

Cook in low heat, covered. When beginning to cook, add hot fish stock and turn heat to medium. Cook for about 20 minutes or until vegetables is tender.

Another way to make the fish stew is to cook fish in fish stock. In this case, don’t strain the stock and season with salt. The tomato, onion and pepper have to be chopped in four. Then add cooked carrot, chayote, potato and egg to stock and cooked fish. To finalize, add parsley, chive, coriander and olive oil.

Arrange vegetables, fish and cooked eggs in a serving plate. Serve with Mush of Fish and Rice.

Carne seca com Abóbora



A Carne Seca com Abóbora, como é conhecida na maior parte do Brasil, é um delicioso prato onde a abóbora é cozida junto com a carne seca. No Nordeste do país é conhecida como Jabá com Jerimum, termos como são chamados seus ingredientes.

A origem deste prato, acredita-se que é uma mescla das culinárias indígena, portuguesa e africana.

Conhecida também como carne de charque, carne-seca, carne salgada, o termo "jabá" é de origem indígena e vem de Yabá" da língua Tupi e significa: fugir, esconder-se. Seu preparo é uma técnica de conservação da carne muito antiga e consiste em salgar a carne e expô-la um tempo ao sol.

 Ingredientes:

1 kg de carne seca

1 cebola grande

3 dentes de alho

2 tomates picados (nós usamos uma lata de tomate pelado)

2 colheres de sopa de óleo vegetal

1,5 kg de abóbora

Salsa picada

Pimenta e sal a gosto

1/2 xícara de água

 

Modo de preparo

1. Corte a carne seca em cubos ou tiras e escalde na água 3 vezes. Começa a ferver e já troque a água nas duas primeiras. Na última deixe cozinhar um pouco mais, este procedimento serve para tirar o sal da carne. Escorra.

2. Refogue a carne em uma panela com cebola, o alho, louro e óleo.

3. Adicione o tomate pelado.

4. Adicione a abóbora cortada em cubos. Acerte o sal. Junte a água e deixe cozinhar com a panela tampada e em fogo baixo. Adicione mais água se for necessário.

5. Quando a abóbora estiver macia, desligue o fogo e coloque salsa picadinha. 6. Sirva com molho de pimenta malagueta (ou outro tipo de pimenta) ao lado.

 

Jerked beef with Squash

Jerked Beef with squash, as it is known in most parts of Brazil, is a delicious dish where the squash is cooked together with the jerked beef. In the Northeast of the country it is known as Jabá with Jerimum, terms as its ingredients are called inthis region.

The origin of this dish is believed to be a mixture of indigenous, Portuguese and African cuisines.

Also known as jerked beef, dried meat, salted meat, the term "jabá" is of indigenous origin and comes from Yabá "in the Tupi language and means: to escape, to hide. Its preparation is a very conservative meat technique. old and consists of salting the meat and exposing it for a while in the sun.

 Ingredients

1 kg jerked beef

1 large onion

3 cloves garlic

2 chopped tomatoes (we use a can of peeled tomatoes)

2 tablespoons vegetable oil

1.5 kg squashn

Chopped parsley

Pepper and salt to taste

1/2 cup water

 

Directions

1. Cut the jerked beef into cubes or strips and blanch in the water 3 times. It starts to boil and already change the water in the first two. In the last let it cook a little more, this procedure serves to remove the salt from the meat. Drain.

2. Braise the beef in a pan with onion, garlic, bay leaves and oil.

3. Add the peeled tomato.

4. Add the diced squash. Set the salt. Add the water and cook with the pan covered and on low heat. Add more water if necessary.

5. When the squash is tender, turn off the heat and add chopped parsley.

6. Serve with hot chilli sauce on the side.

Frango com Quiabo Diferente

 


O Frango com Quiabo é um prato típico da culinária do Estado de Minas Gerais. Usualmente ele é feito com pedaços de frango cortado nas juntas, com pele e quiabos, que podem ser inteiros ou cortados. Nós fizemos esse prato com filé de sobrecoxa de frango cortado em cubos e o transformamos num picadinho de frango com quiabo.

 

Ingredientes:

Filés de sobrecoxa de frango

Sal, alho amassado e páprica picante

Tomate e cebola picadinhos

Vinagre

Quiabo

 

Modo de fazer:

1. Lavar os quiabos, secar bem e cortar em rodelas. Reservar.

2 Cortar os filés de frango em cubos grandes.

3. Temperar os cubos de frango com sal, alho amassado e páprica picante.

4. Saltear o frango com a cebola e o tomate bem picadinhos até pegar cor.

5 Adicionar o quiabo e um pouco de vinagre para o quiabo não largar baba.

6. Refogar um pouco. Adicionar um pouco de água, tampar a panela e baixar o fogo. Cozinhar até o frango ficar macio.

 





Chicken with Okra Different

5 Add the okra and a little vinegar so that the okra does not drop drool.

6. Sauté a little. Add a little water, cover the pan and lower the heat. Cook until the chicken is tender.

Frango com “Ora Pro Nobis”

 


Ora-Pro-Nóbis (peleskia aculeata) significa “rogai por nós” e, segundo a tradição, esse nome foi dado por algumas pessoas que colhiam a planta no quintal de uma igreja, enquanto o padre rezava a missa em latim. É também conhecido como Lobrobó ou Trepadeira limão.


Embora seja um cacto por classificação, é uma planta apoiadeira, ou seja, precisa de suportes ou apoios onde possa ir acomodando seus ramos flexíveis e espinhento

As propriedades nutritivas desta planta já são bastante conhecidas pelas pessoas que vivem nas zonas rurais de Minas Gerais e a cultivam em seu quintal como remédio e alimento.

Com folhas verdes escuras, é mais popular cobrindo cercas e muros do que compondo pratos no dia a dia. Um desperdício, tendo em vista a riqueza nutricional da planta. É rústica, de fácil cultivo, propagação e resistente a mudanças climáticas. Suas folhas podem ser comidas crua em saladas ou cozidas, compondo diversos pratos da culinária mineira. No seu preparo cozido tem que se usar as dicas das cozinheiras experientes, pois as folhas do ora pro nobis geram baba, a semelhança do quiabo, outro ingrediente muito utilizado na culinária da região.

O estado de Minas Gerais é o local em que ela tem mais popularidade. Na cidade de Sabará, na região metropolitana de Belo Horizonte, há mais de 20 anos acontece um festival dedicado a ele.

O ora-pro-nóbis, apelidada de carne de pobre, graças a alta quantidade de proteína contida em suas folhas, tem ampla utilização também como remédio pelas populações rurais, pois ajuda a evitar o envelhecimento precoce da pele e das células, é aliada do bom funcionamento do intestino e ajuda a manter e a ganhar massa magra.

A Galinha com Ora Pro Nobis não é tão conhecida no resto do país como outro prato típico da culinária mineira a Galinha com Quiabo. Mas garantimos que fica difícil dizer para quem provar qual dos dois é o prato mais gostoso.

 

INGREDIENTES

1,200 kg de coxas e sobrecoxas de frango sem pele

Azeite de Oliva

Sal

2 dentes de alho picadinhos

1 cebola roxas picada

Pimenta do reino e páprica picante a gosto

2 folhas de louro

Molho inglês a gosto

Colorau (opcional)

29 a 30 folhas de ora-pro-nobis inteiras (ou cortadas finas como na couve mineira)

 

MODO DE PREPARO

Colocar os pedaços de frango em uma vasilha com água e limão e deixar de molho. A seguir lavar bem para tirar a gosma.

Colocar o frango numa vasilha e temperar. Deixar o frango nessa marinada para tomar gosto por cerca de 2 horas.

Em uma panela, no fogo alto, frite no azeite os pedaços de frango temperados até dourar. Se necessário ir adicionando um pouco da marinada para o frango não grudar no fundo da panela.

Baixe o fogo para médio e acrescente o restante da marinada que ficou na vasilha.

Baixe o fogo e tampe a panela. Ir adicionando água quente sempre que for necessário. O caldo deverá ficar espesso e o frango cozido.

Polvilhe o frango com a salsa picada.

Depois do frango cozido, espalhe as folhas de ora pro nobis e tampe a panela. Deixe mais 2 minutos e desligue o fogo.

Sirva com polenta e arroz branco.

 






Chicken with “Ora Pro Nobis”

Ora-Pro-Nóbis (peleskia aculeata) means “pray for us” and, according to tradition, this name was given by some people who harvested the plant in the backyard of a catolic church, while the priest said mass in Latin. It is also known as Lobrobó or Lemon Climbing.

Although it is a cactus by classification, it is a supportive plant, that is, it needs supports where it can accommodate its flexible and thorny branches

The nutritional properties of this plant are already well known by people who live in rural areas of Minas Gerais and cultivate it in their backyard as medicine and food.

With dark green leaves, it is more popular covering fences and walls than composing dishes on a daily basis. A waste, considering the nutritional richness of the plant. It is rustic, easy to grow, propagate and resistant to climate change. Its leaves can be eaten raw in salads or cooked, composing several dishes of Minas Gerais cuisine. In its cooked preparation, the tips of experienced cooks must be used, since the leaves of the ora pro nobis generate drool, like okra, another ingredient widely used in the culinary of the region.

The state of Minas Gerais is the place where it has the most popularity. In the city of Sabará, in the metropolitan region of Belo Horizonte, a festival dedicated to him has been happening for over 20 years.

The ora-pro-nobis, nicknamed the meat of the poor, thanks to the high amount of protein contained in its leaves, is also widely used as a medicine by rural populations, as it helps to prevent premature aging of the skin and cells, is an ally of good bowel function and helps maintain and gain lean mass.

Chicken with Ora Pro Nobis is not as well known in the rest of the country as another typical dish of Minas Gerais culinary, Chicken with Okra. But we guarantee that it is difficult to tell whoever tastes which of them is the most delicious dish.

 

INGREDIENTS

1,200 kg skinless chicken thighs and drumsticks

Olive oil

salt

2 chopped garlic cloves

1 chopped red onion

Black pepper and spicy paprika to taste

2 bay leaves

Worcestershire sauce

Colorau (optional)

29 to 30 whole ora-pro-nobis leaves (or cut thin)

 

DIRECTIONS:

Place the chicken pieces in a bowl with water and lemon and let it soak. Then wash well to remove the goo.

Place the chicken in a bowl and season. Leave the chicken in this marinade to taste for about 2 hours.

In a pan, over high heat, fry the seasoned chicken pieces in olive oil until golden brown. If necessary, add a little of the marinade so that the chicken does not stick to the bottom of the pan.

Lower the heat to medium and add the rest of the marinade left in the bowl.

Lower the heat and cover the pan. Add hot water whenever necessary. The broth should be thick and the chicken cooked.

Sprinkle the chicken with the chopped parsley.

After the chicken is cooked, spread the ora pro nobis leaves and cover the pan. Cook another 2 minutes and turn off the heat.

Serve with polenta and white rice.

Torta de Brigadeiro

Nesse Dia dos Pais vamos fazer uma torta deliciosa tradicional da culinária brasileira para sua festa.

A origem do nome "brigadeiro" é ligada à campanha presidencial do Brigadeiro Eduardo Gomes, candidato à Presidência da República em 1946 que adorava uns docinhos de chocolate. As pessoas começaram a chamar esses docinhos de chocolate como "docinhos do brigadeiro".

 Ingredientes

 Massa:

7 colheres de sopa (165 g) de farinha de trigo

9 colheres de sopa (190 g) de açúcar

5 colheres de sopa de Nescau

8 ovos

Bater as claras em neve e acrescentar as gemas. Adicionar o açúcar aos poucos e colocar as colheres de farinha de trigo com a batedeira em movimento. Por último, o chocolate sem bater muito (bater o suficiente só para misturar).

Recheio e Cobertura:

1 lata de Nescau (500 g)

3 latas de leite condensado

1 pacote de chocolate granulado

Para molhar: fazer 1 copo de chocolate (leite, açúcar e Nescau)

Colocar no fogo as 3 latas de leite condensado misturada à lata de Nescau e ir mexendo até começar a aparecer o fundo da panela.

Montagem

Cortar a massa ao meio, molhar com o copo de chocolate e rechear o brigadeiro, deixando uma parte que seja suficiente para cobrir o bolo. A seguir, cobrir com o brigadeiro reservado e salpicar com o chocolate granulado.

Chocolate Brigadier Cake

On this Father's Day we will make a delicious traditional Brazilian cuisine pie for your party.

Ingredients

Dough:

7 tablespoons (165 g) all purpose flour

9 tablespoons (190 g) sugar

5 tablespoons Nescau (chocolate powder)

8 eggs

Beat the egg whites, add the egg yolks and continue beating. Add the sugar little by little and then place the tablespoons of flour with the mixer in motion. Finally, the chocolate powder without beating too much (beat enough just to mix).

Filling and Covering:

1 can Nescau (500 g)

3 cans sweetned condensed milk

1 packet of granulated chocolate

To wet: make 1 cup of chocolate (milk, sugar and Nescau)

Place the 3 cans of condensed milk mixed with the Nescau can in a pan on the fire and stir with a spon until the bottom of the pan begins to appear.

Assembly

Cut the dough in half, wet it with the chocolate cup and fill with the chocolate, leaving enough to cover the cake. Then cover with the reserved chocolate and sprinkle with granulated chocolate.

Cozido à Brasileira


É um prato típico de Portugal e é capaz de encher o estômago dos apetites mais vorazes. Geralmente, é servido numa travessa bem grande, deixando à vista a variedade de carnes, embutidos e legumes que lhe dão forma. O “cozido à portuguesa” já perdeu a conta dos séculos que tem, sendo reconhecido como um dos pratos mais antigos do país. É reivindicado pelos portugueses como o Monumento da Gastronomia Nacional, fazendo parte do menu de quase todos os restaurantes típicos.

Considerando-se que esta receita nasceu e evoluiu com os portugueses, decidimos ir à procura das suas origens mais antigas. A surpresa das surpresas surgiu quando descobrimos que, aquilo que é rotulado de “património gastronómico”, não possui raízes assim tão portuguesas. Tudo indica que “o cozido à portuguesa” nasceu na Espanha, mais concretamente em Castela.

Segundo os levantamentos históricos, “o cozido à portuguesa” foi uma herança deixada pelos espanhóis aos portugueses. Embora a receita atual deste prato seja diferente da espanhola, a génese da tradição foi parcialmente importada. No entanto, muitos dos estudos elaborados não são precisos. Há quem refira que este prato nasceu em Portugal, devido à necessidade económica das famílias portuguesas. Segundo esta versão, no século XVII, alguém decidiu aproveitar as sobras das refeições e as carnes menos nobres, colocando-as numa panela a cozer para apurarem sabor. Esta era a forma mais barata e eficaz de elaborar os alimentos. Outras versões, referem que o “cozido” é um dos pilares da cozinha espanhola. O famoso livro Dom Quixote de La Mancha, de Miguel de Cervantes, ajuda a comprovar a importância do cozido espanhol – comummente conhecido como “olla podrida”. Ola podrida significa panela poderosa, devido à grande variedade de alimentos e nutrientes que contém.

A primeira receita escrita, em Portugal, foi publicada no livro “Arte da Cozinha”, de autoria de Domingos Rodrigues, em meados do século XVII. Neste documento, é mencionado um prato denominado “olla podrida” – versão espanhola do “cozido à portuguesa”. Numa altura em que a língua portuguesa ainda era dominada por alguns termos em castelhano, não era de estranhar que algumas palavras tivessem o sotaque dos espanhóis. Contudo, Domingos Rodrigues,  cita no seu livro os ingredientes principais que ajudavam a dar forma e sabor ao cozido tradicional espanhol, com um toque português: “hum pedaço de vaca muito gordo, huma galinha, huma perdiz ou pombos, hum coelho, huma orelheira, chouriços, linguiça, lombo de porco, nabos, alho, grão, duas ou três dúzias de castanhas, sal e cheiros”. Tendo em conta estes dados, tudo ajuda a indicar que a versão portuguesa desse prato foi ligeiramente adaptada da cozinha espanhola. Em Portugal sofreu principalmente a inclusão dos enchidos (embutidos) nacionais como a chouriça de sangue, o salpicão, o presunto e o toucinho entremeado, ganhando uma “alma” diferente. Mas as adaptações não ficaram por aqui; este prato viajou o mundo e transcendeu as fronteiras gastronómicas. O cozido foi adaptado pelos franceses, que o apelidaram de “Pot-au-Feu”; pelos belgas que o chamam de “Hochepot”; e pelos italianos que o designa como “Bollito Misto”.


No Brasil, o cozido contou também com ligeiras modificações, com a inclusão de ingredientes encontrados no Novo Mundo, como a mandioca, o milho e a batata doce.

Lembramos que a lista de ingredientes pode variar de acordo com os gostos de cada um e a disponibilidade dos mesmos.

Ingredientes:
Carnes: músculo de boi (ou outra carne de boi de segunda), linguiça, paio e carne seca
Legumes: batata, batata doce, cenoura, mandioca, milho verde, chuchu, cebola pérola, cebola, abóbora, brócolis, couve, repolho, banana nanica (d’água) e ovos cozidos

Modo de fazer:
1.            Numa tigela, coloque a carne-seca e cubra com água fria. Leve para a geladeira e deixe por 12 horas para dessalgar - durante esse período, troque de água pelo menos duas vezes.
2.            Cozinhar a carne seca em uma panela de pressão com água.
3.            Picar 2 alhos e 1 cebola. Colocar azeite de oliva numa panela grande e refogar as carnes cortadas em pedaços junto com o alho e a cebola, sal e louro. Ir pingando água e continuar refogando até as carnes ficarem macias.
4.            Enquanto isso, descasque os legumes e corte cada um em pedaços grandes. Descasque e corte as cebolas ao meio (a cebola pérola deixe inteira).
5.            Já as folhas de couve e repolho deixe-as folhas inteiras ou rasgadas. A banana vai ser cozida com a casca.
6.            A seguir colocar bastante água fervendo na panela com as carnes e começar a adicionar os legumes. Lembrem-se que como os legumes cozinham mais rápidos do que os outros é importante seguir uma certa ordem. Além disso, se necessário, tire alguns legumes durante o processo de cozimento, para não ficarem cozidos demais.
7.            Junte à panela primeiro os pedaços de mandioca, batata,  cebola e batata-doce. A seguir adicione o chuchu, a cenoura e a abóbora. Por último a couve, o repolho, a banana e o brócolis. Deixe cozinhar, verificando sempre o ponto de cozimento com um garfo. Eles devem ficar cozidos mas ainda firmes
8.            . Com uma escumadeira, transfira os pedaços de legumes e as carnes para uma travessa grande. Adicione o caldo e sirva quente.
9.            Os ovos devem ser cozidos em outra panela e depois juntados ao cozido na hora de servir.

O cozido é sempre servido com arroz e pirão.

Pirão
Ingredientes
·                     3 xícaras de chá do caldo do cozido
·                     1 xícara (chá) de farinha de mandioca

Modo de fazer:
Transfira o caldo do cozido para uma panela. Leve ao fogo alto. Quando ferver, diminua o fogo para médio e coloque aos poucos a farinha no caldo com uma das mãos enquanto mistura com uma colher de pau com a outra mão para não empelotar. Mexa bem por cerca de 5 minutos até o pirão ficar liso.

Cozido - Cooked Brazilian-Style (a kind o stew)

It is a typical dish of Portugal and is able to fill the stomach with the most voracious appetites. It is usually served on a very large platter, leaving the variety of meats, sausages and vegetables that shape it in sight. The “Portuguese-style stew” has lost count of its centuries, being recognized as one of the oldest dishes in the country. It is claimed by the Portuguese as the National Gastronomy Monument, being part of the menu of almost all typical restaurants.

Pursuing the certainty that this recipe was born and evolved with the Portuguese, we decided to go looking for its most remote origins. The surprise of the surprises came when we discovered that what is labeled “gastronomic heritage” has no such Portuguese roots. Everything indicates that “the Portuguese stew” was born in Spain, more specifically in Castile.

According to historical surveys, “the Portuguese stew” was a heritage left by the Spanish to the Portuguese. Although the actual recipe for this dish is different from Spanish, the genesis of tradition has been partially imported. However, many of the elaborate studies are not accurate. Some mention that this dish was born in Portugal, due to the economic need of Portuguese families. According to this version, in the seventeenth century, someone decided to take advantage of leftovers and less noble meats, placing them in a pan to bake for flavor. This was the cheapest and most effective way to make food. Other versions mention that the "stew" is one of the pillars of Spanish cuisine. Miguel de Cervantes's famous book Don Quixote de La Mancha helps to prove the importance of Spanish stew - commonly known as “olla podrida”. Podrida means powerful pot due to the wide variety of foods and nutrients it contains.

The first written recipe in Portugal was published in the book “Arte da Cozinha” by Domingos Rodrigues in the mid-17th century. In this document, a dish called “olla rotrida” is mentioned - Spanish version of “boiled Portuguese”. At a time when the Portuguese language was still dominated by some Spanish terms, it was not surprising that some words had the Spanish accent. However, Domingos Rodrigues, in his book, cites the main ingredients that helped shape and flavor traditional Spanish stew with a Portuguese twist: “a piece of very fat cow, a chicken, a partridge or pigeons, a rabbit, an earmuff “Chorizo, sausage, pork loin, turnips, garlic, grain, two or three dozen nuts, salt and smells (herbs)”. Given this data, everything helps to indicate that the Portuguese version of this dish was slightly adapted from Spanish cuisine. In Portugal it suffered mainly the inclusion of national sausages and bacon, gaining a different "soul". But the adaptations didn't stop there; This dish traveled the world and transcended gastronomic boundaries. The stew was adapted by the French, who nicknamed it “Pot-au-Feu”; by the Belgians who recognize him as a "Hochepot"; and by the Italians who designate it as "Bollito Misto”.

In Brazil, the stew also had slight modifications, with the inclusion of ingredients found in its territory, such as cassava (manioc), corn, and sweet potato.

Remember that the list of ingredients may vary according to the tastes of each and the availability of ingredients.

Ingredients:
Meats: Beef (Brisket or Chuck), sausage, paio and jerked beef cut into large pieces.
Vegetables: Potatoes, sweet potatoes, carrots, cassava (manioc), corn, chayote, pearl onions, onions, squash, broccoli, kale, cabbage, banana and boiled eggs

Directions:
1. In a bowl, place the beef jerky and cover with cold water. Refrigerate and leave for 12 hours to take salt and hydrate - during this time change water at least twice.
2. Cook the jerked beef in a pressure cooker with water.
3. Chop 2 garlic and 1 onion. Place olive oil in a large saucepan and braise the chopped meats along with the garlic and onion, salt and bay leaf. Dripping water and continue to braise until the beef meat is tender.
4. Meanwhile, peel the vegetables and cut each one into large pieces. Peel and cut the onions in half (the pearl onion let whole).
5. Kale and cabbage leaves let them whole or torn leaves. The banana will be cooked with the peel.
6. Then add plenty of boiling water to the pan with the meat and start adding the vegetables. Remember that as vegetables cook faster than others, it is important to follow a certain order. Also, if necessary, remove some vegetables during the cooking process so that they are not overcooked.
7. Add the cassava, potato, onion and sweet potato pieces to the pan first. Then add the chayote, carrot and squash. Add banana. Lastly the kale, cabbage, and broccoli. Let it cook, always checking the cooking point with a fork. They should be cooked but still firm.
8.. With a slotted spoon, transfer the pieces of vegetables and meat to a large serving dish. Add broth and serve hot.
9. Eggs should be cooked in another pan and then added to the stew at serving time.

That stew is always served with rice and pirão.

Pirão (mud?) recipe
Ingredients
• 3-4 cups of stew broth
• 1 cup of manioc flour

Directions:
Transfer the broth to a pan. Bring to high heat. When it boils, reduce the heat to medium and gradually add the flour to the broth with one hand while mixing with a wooden spoon with the other hand to avoid lump. Stir well for about 5 minutes until the pirão smooth.
