Picadillo Cubano

 



A palavra "picadillo" vem da palavra espanhola picar, que significa cortar. Embora apontado como comida clássica cubana, o picadillo pode ser encontrado em toda a América Latina e Caribe e até nas Filipinas.

Picadillo é o nome de uma variedade de pratos originários da Espanha e, como é o caso de muitos pratos amados, tem muitas variações regionais. De acordo com o The Domestic Man, a versão cubana geralmente combina os sabores distintos do cominho, orégano, azeitonas verdes, alcaparras e passas. É semelhante ao chili com carne da América, mas há nuances doces e salgadas, pois os sabores familiares são equilibrados com os mais exóticos.

As receitas de Picadillo diferem um pouco de país para país, embora a maioria seja baseada em carne moída ou picada e vegetais cozidos em molho de tomate.

Os acompanhamentos típicos do Picadillo, assim como as receitas, variam de região para região e de cozinha para cozinha.

Se você está aderindo a uma receita tradicional de picadillo ao estilo cubano, você pode querer também manter os acompanhamentos cubanos tradicionais. O arroz é o acompanhamento mais típico, embora muitos cozinheiros cubanos (e porto-riquenhos) também prefiram fritar algumas batatas picadas e polvilhá-las por cima como uma espécie de guarnição / acompanhamento. As batatas, no entanto, não substituem o arroz, mas fazem uma segunda porção de amido.

Indo além do simples arroz e batatas, sugerimos que um prato de bolinhos de milho fresco é o acompanhamento perfeito, assim como o clássico fufú de plátano cubano, ou purê de banana da terra. Ingredientes

800 g de carne moída (ou carne picada)

Tempero:

1 cebola média grande picadinha

3 dentes de alho bem picados

1 colher de sopa de pimentão verde picadinho

Pimenta dedo de moça sem sementes a gosto (nós usamos meia)

1 colher de chá de cominho moído

2 colheres de chá de orégano

2 folhas de louro

Sal e pimenta do reino a gosto

 

¾ xícara de vinho branco seco

1 xícara de azeitonas verdes inteiras recheadas com pimentão

½ xícara de uvas passas

¼ xícara de alcaparras escorridas

1 lata (400 g) de torradas pelados

3 batatas pequenas descascadas e cortadas em pedaços pequenos (opcional)

Azeite (ou óleo vegetal)

 

Instruções

1. Em uma panela, doure a carne com os temperos. Nota: um pouco de sal – não muito porque as azeitonas e as alcaparras são salgadas.

2. Adicione os pedaços de batata e cozinhe por cerca de 5 minutos (opcional).

3. Adicione o vinho, as passas e os tomates pelados quando as batatas estiverem meio cozidas (quando uma faca pode passar facilmente pela primeira parte, mas o centro ainda está bem firme).

4. Cozinhe por mais 5 minutos e depois acrescente as azeitonas e as alcaparras.

5. Continue cozinhando em fogo médio, mexendo de vez em quando, até que as batatas estejam prontas. Se o molho engrossar muito, você pode adicionar um pouco mais de vinho ou um pouco de água. Prove e ajuste os temperos.

6. Nós servimos com arroz, purê de banana prata feito no micro-ondas e, batatas fritas.

 

Cuban Beef Picadillo

The word "picadillo" itself comes from the Spanish word picar, which means to chop or mince, and at first glance, the dish seems to resemble American Sloppy Joes or corned beef hash. Although touted as classic Cuban comfort food, picadillo can be found all over Latin America and the Caribbean and even the Philippines.

Picadillo is the name of a variety of dishes first originating in Spain, and as is the case with many beloved dishes, it has many regional variations. According to The Domestic Man, the Cuban version generally combines the distinct flavors of cumin, oregano, green olives, capers, and raisins. It's similar to America's chili con carne, but there are sweet and savory nuances, as familiar flavors are balanced with those that are more exotic.

Picadillo recipes differ just a bit from country to country, though most are based around ground or chopped meat and veggies simmered in tomato sauce.

Typical side dishes of Picadillo, as with the recipes, vary from region to region and cook to cook.

If you are sticking with a traditional Cuban-style picadillo recipe, one that the Times says should include olives (they recommend the pimiento-stuffed green kind) and maybe even capers, you may want to keep to traditional Cuban side dishes, as well. Rice is the most typical side to accompany picadillo, although many Cuban cooks (and Puerto Rican cooks, as well) also prefer to fry up some chopped potatoes and sprinkle them on top as a kind of garnish/side dish combo. The potatoes, however, do not replace the rice, but rather make for a second helping of starch.

Moving beyond plain old rice and potatoes, Cuban Recipes suggests a dish of fresh corn fritters makes the perfect meal accompaniment, as might the classically Cuban fufú de plátano, or mashed plantains. Platanos en tentación is another plantain-based dish (the name translates to temptation plantains), one that, while sweet, is eaten as a vegetable rather than a dessert. Beans and rice is also a popular Cuban veggie dish, one that can be made with either red or black beans. Okra and even yucca root round out our list of common Cuban side dishes.

Ingredients

800 g ground beef (or chopped  beef)

 

Seasoning:

1 medium large onion diced

3 garlic cloves finely chopped

1 tablespoon green bell pepper diced

Pepper to taste

1 teaspoon ground cumin

2 teaspoon oregano

2 bay leaves

Salt and pepper to taste

 

¾ cup dry white wine

1 cup whole green olives stuffed w/ pimentos

½ cup raisins

¼ cup capers drained

1 can (400 g) peled tomaroes

3 small potatoes peeled and cut in small pieces (optional)

Olive oil (or vegetal oil)

 

Instructions

1.           In a pan, brown the ground beef with the ingredientes of seasonings. Note: a little salt – not too much as the olives and capers are salty.

2.           Add the potatoes pieces and cook for about 5 minutes (optional).

3.           Add the wine, raisins and peeled tomatoes when the potatoes are about half-cooked (a knife can easily through the first part but the center is still very firm).

4.           Cook for 5 more minutes and then add the olives and capers.

5.           Continue cooking over medium heat, stirring occasionally, until the potatoes are ready. If the sauce thickens too much, you can add some more wine or a little bit of water. Taste and adjust any seasonings.

6.           6. We serve it with rice, microwaveable silver banana puree and French fries.

Paçoca de Carne

 


A paçoca de carne seca é um prato que se encontra em quase todo o Brasil, herança da tradição alimentar dos índios, que tinham como base da alimentação a mandioca. Este prato é ainda hoje quase igual ao original, que consistia em uma farofa feita com carne ou peixe socados no pilão com farinha de mandioca. A palavra “paçoca” deriva de “pa’soka”, que na língua Tupi significa esmigalhar, pilar no pilão.

A difusão da receita se deu a partir do séc. XVII com as caravanas que transportavam produtos para abastecer as regiões centrais do país. Durante viagens longas por caminhos precários o “tropeiro”,  preparava as suas refeições com ingredientes muito resistentes, adequados ao transporte nas tropas de animais, de fácil preparo e de grande valor nutritivo, como a farinha de mandioca e a carne seca. Existem inúmeras versões desta receita preparadas com diferentes tipos de carnes, mas sempre acrescidas de farinha de mandioca, de farinha de milho ou das duas juntas.

A receita apresentada é um aproveitamento de sobras.

 

Ingredientes:

Carne Assada desfiada e molho ferrugem do preparo desta carne

Farinha de mandioca

½ cebola picada

Óleo de girassol

 

Modo de fazer:

Numa frigideira com óleo, refogar a cebola até ficar transparente. Adicionar a farinha de mandioca e, sempre mexendo, torrá-la (dourar)

Adicionar a carne desfiada e misturar bem.

 




Beef “Paçoca”

 

The jerked beef “paçoca” is a dish that is found in almost all of Brazil, inheritance of the food tradition of the Indians, who had manioc as their food base. This dish is still almost identical to the original, which consisted of a farofa made with meat or fish pounded in a pestle with manioc flour. The word “paçoca” derives from “pa’soka”, which in the Tupi language means to crumble, pillar in the pestle.

The diffusion of the recipe took place from the 17th century onwards. with the caravans that transported products to supply the central regions of the country. During long journeys on precarious roads, the “tropeiro” prepared his meals with very resistant ingredients, suitable for transporting animals in troops, easy to prepare and of great nutritional value, such as manioc flour and dried meat. There are numerous versions of this recipe prepared with different types of meat, but always with manioc flour, corn flour or both together.

The recipe presented is a use of leftovers.

 

Ingredients:

Shredded Well Done Roast Beef of Eye Round and Sauce from the preparation of this beef

Cassava flour

½ onion chopped

Sunflower oil

 

Directiions:

In a skillet with oil, sauté the onion until translucent. Add the manioc flour and, always stirring, toast it (golden)

Add the shredded meat and mix well.

Picadinho de Carne com Quiabo

  


Prato típico do Sul dos Estados Unidos de origem africana. Esta receita foi baseada num prato da chef Kardea Brown da Carolina do Sul.

 

Ingredientes:

Óleo de girassol

400 g de alcatra picada em cubos

Sal e pimenta do reino

½ cebola picada

2 dentes de alho picadinhos

200 g tomates pelados (1/2 lata)

11/2 xícaras de caldo de carne ou água

1 cm gengibre picado

400 g quiabo picado ao meio

1 colher de chá de vinagre

1 colher de chá de açúcar

Directions:

1. Esquente o óleo numa panela em fogo alto. Tempere a carne com sal e pimenta do reino (cerca de 1 colher de chá de cada). Adicione a carne, a cebola, o alho e o gengibre ao óleo quente. Cozinhe sempre mexendo até ao carne ficar selada. Reduza o fogo para médio. Continue cozinhando, sempre mexendo, até  a carne ficar dourada.

2. Adicione os tomates pelados, o açúcar, 1 colher de chá de pimenta e uma xícara de água. Mexa bem e deixe ferver. Acerte o sal. Adicione o vinagre e o quiabo. Reduza o fogo para baixo, tampe a panela e ferva até o quiabo ficar macio, cerca de 15 minutos. Se necessário, adicione mais água se o molho ficar muito grosso.









Beef and Okra Stew

Typical dish from the Southern United States of African origin. This recipe was based on a dish by chef Kardea Brown from South Carolina.

 

Ingredients:
Sunfloer oil (or Canola oil)
400 g beef top sirloin, cut into 1-inch cubes
Kosher salt and freshly cracked black pepper
1/2 white onion, chopped
2 cloves garlic, minced
1 cup water or beef stock, plus more as needed
400 g peleed tomato (1/2 can)
1 cm ground ginger

1tsp sugar (or more)

1tsp vinegar

400 g package frozen okra

Directions:

1. Heat the oil in a pan over high heat. season the beef with salt and pepper (about 1/2 teaspoon of each). Add the beef to the hot oil. Add  onion and garlic and ginger. Cook stirring until the beef is seared. Reduce the heat to medium. Continue to cook, stirring, until the beef is browned,

2. Add the peleed tomatoes, sugar,1 teaspoon freshly cracked pepper and 1 cup water into the pan. Bring to a boil; season with salt. Add the okra and vinegar. Reduce the heat to low, put the lid and simmer until the okra is tender, about 15 minutes. If Necessary, add additional stock or water if the stew is too thick; the okra will thicken the stew as it cooks.

Rabada Diferente

 


Serve: 4 a 6 porções

Servimos os rabos de boi com osso, mas se quiser pode facilmente retirar a carne dos ossos antes de servir.

Ingredientes

1, 2 kg de Rabos de boi separados nas juntas

Sal e pimenta do reino

2 dentes de alho picados

Azeite de oliva extra virgem

 

1 cebola média, picada

1 talo de aipo, picado

1 cenoura picada

2 xícaras de chá (475 ml) de caldo (frango ou carne) ou água

2 xícaras de chá (475 ml) de vinho tinto seco

2 folhas de louro

1 pitada de orégano

Salsa picada

Método

Tempere o rabo de boi com sal, pimenta e alho. Doure-os em azeite de oliva :: Aqueça 1 colher de sopa de azeite em fogo médio-alto em uma panela.

Trabalhando em lotes, e não lotando a frigideira, sele os pedaços do rabo de boi na panela quente por todos os lados até ficarem dourados. Retire-os para um prato e reserve.

Em uma panela de pressão, refogue a cebola, a cenoura, o aipo em um pouco de azeite: Adicione a cebola picada, a cenoura e o aipo à panela. Cozinhe por alguns minutos até que as cebolas fiquem translúcidas.

Adicione os pedaços do rabo de boi, louro, orégano, sal, caldo, vinho, tampe a panela de pressão e cozinhe por 15 minutos: Como a carne ainda não estava macia, adicionamos mais 1 1/2 xícara de água e voltamos a cozinhar na pressão por mais 10 minutos

 








Oxtail Stew

Serve: 4 to 6 servings

We serve the oxtails with the bone-in, though if you want you can easily remove the bones from the meat before serving.

Ingredients

1.2 kg oxtails with separated joints

Salt and black pepper

2 garlic cloves chopped

Extra virgin olive oil

 

1 medium onion, chopped

1 celery rib, chopped

1 carrot, chopped

2 cups (475 ml) stock (chicken or beef) or water

2 cups (475 ml) dry red wine

2 bay leaves

Pinch of oregano

Parsley chopped

Directions

Seasoning oxtails all over with salt and pepper and garlic. Brown the oxtails in olive oil:: Heat 1 tablespoon of olive oil on medium high heat in a pan.

Working in batches, and not crowding the pan, sear the oxtails in hot pan on all sides until golden brown. Remove oxtails to a plate, setting aside.

In a pressure cooker, sauté onions, carrots, celery: Add the chopped onion, carrot, and celery to the pan. Cook for a few minutes until onions are translucent.

Add oxtails, bay leaf, oregano, salt, stock, wine, cover the pressure cooker and simmer for 15 minutes: As the meat was not yet tender, we added another 1 1/2 cups of water and went back to cooking in the pressure cooker for another 10 minutes

Picadinho de Carne com Pimentão

 



Ingredientes:

1 kg de Alcatra cortada em cubos

½ Cebola picadinha

2 dentes de alho amassados

Molho inglês a gosto

Sal e pimenta do reino a gosto

1 a 2 colheres de chá de manjericão seco

2 folhas de louro

Mini pimentões amarelos

 

Modo de fazer:

Numa vasilha misturar todos os ingredientes, a exceção dos pimentões.

Numa panela com 1 a 2 colheres de sopa de azeite de oliva bem quente saltear a carne até ficar dourada e secar.

Adicionar um pouco de água, baixar o fogo e tampar a panela. Quando a carne estiver macia adicionar os pimentões, mais um pouco de água e deixar os pimentões murcharem.

 








Beef stew with Bell Pepper

Ingredients:

1 kg rump cut into cubes

½ finely chopped onion

2 cloves garlic crushed

Worcestershire sauce to taste

Salt and black pepper to taste

1 to 2 teaspoons dried basil

2 bay leaves

Mini yellow bell peppers

 

Directions:

In a bowl mix all ingredients, except bell peppers.

In a pan with 1 to 2 tablespoons of very hot olive oil, sauté the meat until golden and dry.

Add a little water, lower the heat and cover the pan. When the meat is tender add the bell peppers, a little more water and let the peppers wither.

Rosbife em Marinada de Vinho, Mostarda e Laranja

 


Ingredientes:

1,4 kg de alcatra

Temperar com sal e pimenta do reino a gosto

Marinada:

1/3 da casca de uma laranja ralada (zest)

2 colheres de sopa de mostarda

2 colheres de sopa de vinho tinto

½ xícara de suco de laranja

1 colher de sopa de Azeite de oliva

 

Molho:

1/2 colher de sopa de farinha de trigo

1 xícara de caldo de carne

 

Modo de fazer:

   1.    Colocar a carne numa tábua de cortar e faça vários furos nela. Transferir para uma vasilha e temperar com sal e pimenta do reino. A seguir despejar a marinada sobre a carne. Cobrir com papel alumínio ou filme plástico e deixar tomar gusto por 2 horas ou durante a noite no refrigerador.

2.     Colocar a carne num tabuleiro de metal, descartar e reservar a marinada. A seguir, selar a carne no fogão.

3.    Retornar a marinada para o tabuleiro e assar em forno alto/médio.

4.    Remover a carne do forno e cobrir.

5.    Enquanto isso, fazer o molho: descartar qualquer excesso de gordura do tabuleiro. Colocar o tabuleiro em fogo médio e salpicar sobre a farinha de trigo. Mexer bem com uma colher, adicionar um pouco do caldo de carne e mexer bem, raspando o fundo do tabuleiro para incorporar os sedimentos da carne.

6.    Adicionar o restante do caldo de carne, ajustar o tempero, se necessário, e ferver por uns 5 minutos, mexendo ocasionalmente.

7.    Servir a carne com o molho.

 


Roast Beef with Wine, Mustard and Orange Marinade

 ·         Serves: 4-6

·         Cooking time:

o    Rare: 20 minutes per 450g/1lb plus 20 minutes

o    Medium: 25 minutes per 450g/1lb plus 25 minutes

o    Well done: 30 minutes per 450g/1lb plus 30 minutes

Ingredients:

·         1.4kg/3lb lean topside or silverside joint

·         Salt and freshly milled black pepper

 

·         For the Wine, Mustard and Orange Marinade:

·         Grated zest of 1/3 orange

·         2 tbsp mustard

·         2 tbsp Madeira wine or sweet sherry

·         ½ cup fresh orange juice

·         1 tbsp mild olive oil


·         For the Gravy:

·         2 tsp plain flour

·         1 cup good hot beef stock

Method:

        1.    Place the joint on a chopping board and make several slits over the surface of the joint.          Transfer to a large shallow dish, season with salt and pepper and rub the marinade all over the joint. Cover and marinate in the refrigerator for 2 hours or overnight.

2.    Place on a metal rack in a large non-stick roasting tin, discard and reserve the marinade mixture and seal the joint.

3.    Return marinade for the metal rack and bake the joint at high oven.

4.    Remove the joint from the oven and cover.

5.    Meanwhile, make the gravy: spoon off any excess fat from the roasting tin and discard. Place the roasting tin over a medium heat and sprinkle over the flour. Stir well with a small whisk or spoon, add a little stock and stir again, scraping the base of the pan to release any rich, beefy sediment.

6.    Add the remaining stock, and any meat juices from the platter, adjust the seasoning, if required, and simmer for 5 minutes, stirring occasionally

7.    Serve beef with the gravy.

Bolo de Carne Francês ou Escondidinho Francês (Hachis Parmentier)


Hachis parmentier é um bolo de carne tradicional da culinária francesa, sendo seu nome uma homenagem a Antoine Parmentier, nutricionista  dos séculos XVIII e XIX, que realizou pesquisas e publicou estudos sobre as qualidades da batata, contribuindo assim para consolidar seu consumo na França. Por outro lado, a palavra “hachis” é derivada do verbo “hacher”, que significa moer ou cortar finamente. Na França, o hamburger  por exemplo é chamado de “steak haché”.

A base deste bolo é a  carne bovina moída, algumas vezes aproveitando sobras de outras refeições, cozida através de um refogado de cebola e, por vezes, outros vegetais. Esta preparação é colocada num prato de ir ao forno, coberta com puré de batata e assada até a superfície ficar dourada. No entanto, o prato permite muitas variações, tanto nos ingredientes principais, como nos condimentos e mesmo na forma de preparação. A receita básica do puré de batata consiste em misturar leitemanteiga e noz moscada, sal e pimenta, ao purê de batata.

Uma variante consiste em colocar a carne entre duas camadas de puré, como no bolo de carne português. A carne pode ser misturada com queijo  gruyère  ou queijo suíço e ovos batidos, também pode ser cozida com tomatecogumelosalho-porroabobrinha, temperada com mostardachalotastomilhocebolinho e vinho e engrossada com creme ou farinha.

A receita a seguir foi baseado numa receita do chef francês Claude Toisgros.

Ingredientes

Purê de batata

·         800 g de batatas

·       200 g de cream cheese

·         200 g de creme de leite

·         Noz moscada, sal

Carne

·         1 cebola picada

·         2 alhos picados

·         ¼ de dedo de moça picado (opcional)

·         1 colher de sopa de óleo vegetal (nós usamos de girassol)

·         600 g de carne de boi moída

·         3 fatias finas de bacon ou a gosto

·         200 g de polpa de tomate

·         1 folha de louro

·         Salsa picada

·         Sal, pimenta do reino

Para gratinar

·         100 g de queijo suíço ralado (opcional)

·         50 g de queijo parmesão ralado

Modo de preparo

Purê de batata

1.      Cozinhe as batatas na água com sal (20 a 30 minutos)

2.      transforme em purê

3.      Coloque o purê no fogo e junte creme de leite e cream cheese pouco a pouco até chegar à textura adequada

4.      Tempere com noz moscada e sal

5.      Misture bem.

Carne

1.      Salteie o bacon em um pouco de óleo

2.      Misture a carne moída com a cebola, o alho e o louro. Tempere com sal e pimenta do reino e junte a carne ao bacon. Seque, tostando bem.

3.      Coloque a polpa de tomate e a salsa. Salteie por mais 1ou 2 minutos.

Montagem

1.      Encha ¾ de um tabuleiro de vidro com a carne

2.      Cubra com a purê de batata

3.      Cubra com os 2 queijos ralados misturados

4.      Coloque no forno em 200º C, até gratinar

5.      Sirva







French Cottage Pie (Hachis Parmentier)

Hachis parmentier is a traditional cottage pie from French cuisine; its name being a tribute to Antoine Parmentier, nutritionist of the 18th and 19th centuries, who carried out research and published studies about the qualities of potato, thus contributing to consolidate its consumption in France. On the other hand, the word “hachis” is derived from the verb “hacher”, which means to grind or finely cut. In France, the hamburger for example is called "steak haché".

The base of this pie or cake is ground beef, sometimes using leftovers from other meals, cooked through an onion stew and sometimes other vegetables. This preparation is placed on an oven-proof dish, covered with mashed potatoes and roasted until the surface is golden brown. However, the dish allows many variations, both in the main ingredients, in the condiments and even in the form of preparation. The basic recipe for mashed potatoes consists of mixing milk, butter and nutmeg, salt and pepper, with mashed potatoes.

A variant consists of placing the meat between two layers of puree, as in the Portuguese pie. The meat can be mixed with gruyère or Swiss cheese and beaten eggs, it can also be cooked with tomatoes, mushrooms, leek, zucchini, seasoned with mustard, shallots, thyme, chives and wine and thickened with cream or flour.

The following recipe was based on a recipe by French chef Claude Toisgros.

Ingredients

Mashed potatoes

• 800 grams potatoes

• 200 grams cream cheese

• 200 grams cream

• Nutmeg, salt

 Beef

          1 chopped onion

• 2 chopped garlic

• ¼ pepper (optional)

• 1 tablespoon vegetable oil (we use sunflower)

• 600 grams ground beef

• 3 thin slices of bacon or to taste

• 200 grams tomato pulp

• 1 bay leaf

          Chopped parsley

• Salt, black pepper

 Finish

• 100 grams grated Swiss cheese (optional)

• 50 grams grated Parmesan cheese

 

Directions

Mashed potatoes

1. Cook the potatoes in salted water (20-30 minutes)

2. Puree

3. Place the puree on the fire and add cream and cream cheese little by little until it reaches the proper texture

4. Season with nutmeg and salt

5. Mix well.

 Beef

1. Sauté the bacon in a little oil

2. Mix the ground beef with the onion, garlic and bay leaf. Season with salt and pepper and add the meat to the bacon. Dry, toasting well.

3. Place the tomato pulp and parsley. Saute for another minute.

 Assembly

1. Fill ¾ of a baking dish with the beeef

2. Cover with mashed potatoes

3. Cover with the 2 grated mixed cheeses

4. Place in the oven at 200º C, until Golden (au gratin)

5. Serve
