Carne seca com Abóbora



A Carne Seca com Abóbora, como é conhecida na maior parte do Brasil, é um delicioso prato onde a abóbora é cozida junto com a carne seca. No Nordeste do país é conhecida como Jabá com Jerimum, termos como são chamados seus ingredientes.

A origem deste prato, acredita-se que é uma mescla das culinárias indígena, portuguesa e africana.

Conhecida também como carne de charque, carne-seca, carne salgada, o termo "jabá" é de origem indígena e vem de Yabá" da língua Tupi e significa: fugir, esconder-se. Seu preparo é uma técnica de conservação da carne muito antiga e consiste em salgar a carne e expô-la um tempo ao sol.

 Ingredientes:

1 kg de carne seca

1 cebola grande

3 dentes de alho

2 tomates picados (nós usamos uma lata de tomate pelado)

2 colheres de sopa de óleo vegetal

1,5 kg de abóbora

Salsa picada

Pimenta e sal a gosto

1/2 xícara de água

 

Modo de preparo

1. Corte a carne seca em cubos ou tiras e escalde na água 3 vezes. Começa a ferver e já troque a água nas duas primeiras. Na última deixe cozinhar um pouco mais, este procedimento serve para tirar o sal da carne. Escorra.

2. Refogue a carne em uma panela com cebola, o alho, louro e óleo.

3. Adicione o tomate pelado.

4. Adicione a abóbora cortada em cubos. Acerte o sal. Junte a água e deixe cozinhar com a panela tampada e em fogo baixo. Adicione mais água se for necessário.

5. Quando a abóbora estiver macia, desligue o fogo e coloque salsa picadinha. 6. Sirva com molho de pimenta malagueta (ou outro tipo de pimenta) ao lado.

 

Jerked beef with Squash

Jerked Beef with squash, as it is known in most parts of Brazil, is a delicious dish where the squash is cooked together with the jerked beef. In the Northeast of the country it is known as Jabá with Jerimum, terms as its ingredients are called inthis region.

The origin of this dish is believed to be a mixture of indigenous, Portuguese and African cuisines.

Also known as jerked beef, dried meat, salted meat, the term "jabá" is of indigenous origin and comes from Yabá "in the Tupi language and means: to escape, to hide. Its preparation is a very conservative meat technique. old and consists of salting the meat and exposing it for a while in the sun.

 Ingredients

1 kg jerked beef

1 large onion

3 cloves garlic

2 chopped tomatoes (we use a can of peeled tomatoes)

2 tablespoons vegetable oil

1.5 kg squashn

Chopped parsley

Pepper and salt to taste

1/2 cup water

 

Directions

1. Cut the jerked beef into cubes or strips and blanch in the water 3 times. It starts to boil and already change the water in the first two. In the last let it cook a little more, this procedure serves to remove the salt from the meat. Drain.

2. Braise the beef in a pan with onion, garlic, bay leaves and oil.

3. Add the peeled tomato.

4. Add the diced squash. Set the salt. Add the water and cook with the pan covered and on low heat. Add more water if necessary.

5. When the squash is tender, turn off the heat and add chopped parsley.

6. Serve with hot chilli sauce on the side.

Ensopado de Carne Seca com Mandioca



400 g carne seca cozida e picada
500 g de mandioca
1 tomate sem pele picado
1 cebola picadinha
1 colher de sopa de pimentão picadinho
3 dentes de alho amassados
Colorau
Pimenta do reino
Sal
Óleo vegetal

1. Dessalgar a carne seca em água durante a noite. Tirar a carne da água
2. Cozinhar a carne seca em água na panela de pressão. Tirar
3. Picar a carne seca em cubos
4.Colocar os temperos na panela de pressão sem a tampa e refogar.
5. Adicionar água, a mandioca picada e temperar com sal.
6. Tampar a panela de pressão e cozinhar por cerca de 5 minutos.
7. Destampar, adicionar a carne seca e refogar uns 2 minutos.








Jerked Beef Stew with Manioc

400 g jerked beef cooked and chopped
500 g manioc
1 tomato skinless chopped
1 onion chopped
1 tablespoon finely chopped bell pepper
3 cloves garlic, crushed
Colorau
Black pepper
Salt
Vegetable oil

1. Desalate the jerked beef in water overnight. Drain
2. Cook the jerked beef with water in the pressure cooker. To take
3. Chop the jerked beef into cubes
4.Place the seasonings in the pressure cooker without the lid and sauté.
5. Add water, chopped manioc and season with salt.
6. Cover the pressure cooker and cook for about 5 minutes.
7. Uncover, add the jerked beef and sauté for about 2 minutes.

Escondidinho Invertido de Carne-seca com Mandioca



Escondidinho são pratos em que a carne fica escondida embaixo de um purê de mandioca ou batata ou inhame. Nesse prato invertemos a ordem colocando a carne-seca encima do purê de mandioca.

Carne-seca:
1. Dessalgar a carne seca em água, trocando a água umas 3 vezes.
2. Cozinhar a carne seca com água numa panela de pressão por 15 minutos.
3. Picar a carne seca
4. Numa frigideira, saltear 1 cebola fatiada no azeite de oliva.
5. Adicionar a carne seca e saltear.

Purê de Mandioca:
1. Colocar os pedaços de aipim numa panela de pressão.
2. Adicionar água temperada com sal até uns dois dedos acima do aipim.
3. Tampar a panela de pressão e cozinhar por uns 15 minutos ou até que o aipim comece a desmanchar
4. Amassar o aipim com um garfo ou colher de pau (pode também bater no processador ou liquidificador).
5. Adicionar manteiga a gosto ao o purê ainda quente. Misturar.

Na hora de servir:
Colocar no prato uma porção de purê de mandioca e por cima a carne seca a gosto.




Upsidedown Escondidinho of Jerked Meat with Cassava

Escondidinho are dishes in which the meat is hidden under a mashed cassava or potato or yam. In this dish we reverse the order by placing the dried meat on top of the manioc puree.

Jerked beef:
1. Take out the salt of the jerked beef in water, changing the water about 3 times.
2. Cook jerked beef with water in a pressure cooker for 15 minutes.
3. Chop the jerked beef
4. In a frying pan, sauté 1 sliced onion in olive oil.
5. Add the beef and sauté.

Cassava Puree:
1. Place the pieces of cassava (manioc) in a pressure cooker.
2. Add salt water until two fingers above the cassava.
3. Cover the pressure cooker and cook for about 15 minutes or until the cassava begins to break
4. Knead the cassava with a fork or wooden spoon (we can also hit in the processor or Blender).
5. Add butter to taste to the puree still warm. Mix.

At the time of serving:
Put a portion of cassava puree on the plate and over the jerked beef to taste.

Carne-seca com Abóbora Diferente



É o famoso jabá com jerimum do nordestino, só que incrementado com amendoim torrado, um ingrediente típico do Nordeste e do Continente Americano.

Ingredientes:

800 g de abóbora (nós usamos a japonesa que é mais doce)
800 g de carne-seca
1 cebola fatiada e partida ao meio
Manteiga sem sal (ou manteiga de garrafa)
Coentro picado
Amendoim torrado, sem pele (pode ser o com sal, vendido para aperitivos)
Pimenta a gosto

Modo de fazer:

1 Deixar a carne-seca de molho em uma vasilha com água durante a noite. Trocar 3 vezes a água.
2. Cozinhar a carne-seca na panela de pressão.
3. Cortar a carne-seca em pedaços.
4. Numa frigideira, saltear a carne-seca na manteiga. Adicionar a cebola e continuar salteando até a cebola ficar “al dente”.
5. Adicionar no final o amendoim e o coentro e saltear mais um pouco.
6. Descascar a abóbora e cortar em pedaços.
7. Cozinhar a abóbora em um pouco de água. Se necessário acrescentar mais água.
8. Quando a abóbora ficar macia, amassar com uma colher de pau ou garfo.
9. Servir o prato com a abóbora por baixo da carne-seca.
  





Different Jerked beef with Pumpkin

Is the famous Northeastern's Jaba with Jerimum (jerked beef with pumpkin), only incremented with roasted peanuts, a typical ingredient of the Northeast and American continent.

Ingredients:

800 g pumpkin (we use the Japanese who is sweeter)
800 g jerked beef
1 sliced onion and cut in half
Unsalted butter (or butter’s bottle)
Chopped coriander (cilantro)
Roasted peanuts, without skin (can be with salt, sold for appetizers)
Pepper or chilli to taste

How to do:

1 Leave the jerked beef in a container with water overnight. Change 3 times the water.
2. Cook the jerked beef in pressure cooker.
3. Cut the jerked beef in pieces.
4. In a skillet, sauté the jerked beef in butter. Add the onion and continue to stir until onion is "al dente".
5. Add the peanuts and cilantro and sauté one minute.
6. Peel the pumpkin and cut into pieces.
7. Cook the pumpkin in a little water. If necessary, add more water.
8. When the pumpkin is tender, mash with a wooden spoon or a fork.
9. Serve the dish with the squash under the jerked beef.

Arrumadinho


É um prato típico da culinária nordestina. Seu nome vem do modo como é servido: os ingredientes arrumados em camadas ou lado a lado, para depois serem misturados no prato.

Os pernambucanos juram que o prato foi inventado por eles. Não é puramente uma comida, mas a mistura de três comidas diferentes em um prato só. Segundo a lenda, o prato foi inventado quando, no final do dia ou no final da noite, a mandioca (macaxeira) acaba, por ser muito consumida como aperitivo. Então, a solução é usar um resto de feijão verde e um pouco de carne de charque. Em seguida, junta-se tudo, bota um pouco de farofa e traz para o freguês.

O arrumadinho é servido em um prato comum para refeição. No prato são colocadas três porções. Em cada terço do prato é colocada uma porção: de feijão verde, de farinha de mandioca, de preferência daquela bem fininha, e de carne-seca.

Ingredientes:

800 g de carne-seca
1 xícara de feijão fradinho ou feijão verde (feijão de corda)
1 xícara de farinha de mandioca crua
Manteiga
1 cebola picada e salteada (quem preferir pode usar crua)
1 tomate picado
Coentro picado
Pimenta a gosto
3 dentes de alho amassado
½ cebola picada

Modo de fazer:
1. Cozinhar o feijão em água e sal, depois de refogado com alho e cebola. Escorrer o caldo.
2. Deixar a carne-seca de molho em uma vasilha com água durante a noite. Trocar 3 vezes a água.
3. Cozinhar a carne-seca na panela de pressão.
4. Cortar a carne-seca em pedaços.
5. Numa frigideira, saltear a carne-seca na manteiga. Adicionar a cebola e continuar salteando até a cebola ficar “al dente”.
6. Fazer uma farofa na manteiga, com sal, 2 dentes de alho e ½ cebola picada.
7. Arrumar numa travessa, na seguinte ordem:

  • Feijão
  • Carne-seca
  • Mistura de temperos: tomate, cebola e coentro picados
  • Farofa

Enfeitar com coentro (opcional)








Arrumadinho

A typical dish of the northeastern culinary. Its name comes from the way it is served: the ingredients arranged in layers or side by side, to then be mixed into the dish.

The “arrumadinho” is served in a common plate to meal. On the plate are placed three portions. In each third of the dish is placed a portion: a green bean, a farofa, and a portion of jerked beef.

Ingredients:

800 g jerked beef
1 cup cow pea or black-eyed peas
1 cup raw cassava flour
Butter
1 chopped onion and sauteed (those who prefer can use raw)
1 tomato chopped
Chopped coriander (cilantro)
Pepper or chilli to taste
3 cloves of crushed garlic
1/2 chopped onion

How to do:
1. Cook the beans in salted water, after saute the beans with garlic and onion. Strain the broth.
2. Leave the jerked beefin a container with water overnight. Change 3 times the water.
3. Cook the jerked beef in pressure cooker.
4. Cut the jerked beef in pieces.
5. In a skillet, sauté the jerked beef in butter. Add the onion and continue to stir until onion is "al dente".
6. Make a farofa with the manioc flour,  butter, 2 cloves of garlic and 1/2 chopped onion.
7. Arrange on a plate in layers, in the following order:

  • Beans
  • Jerked Beef
  • Mixture of spices: tomato, onion and cilantro chopped
  • Farofa

Garnish with cilantro (optional)

Carne-Seca com Abóbora



Prato típico da culinária brasileira: é o jabá com jerimum do nordestino, o charque com abóbora do gaúcho e a carne-seca com abóbora do mineiro e do carioca. 

Ingredientes:

500g de carne-seca
500g de abóbora picada
½ cebola picada
1 dente de alho amassado
Tempero misto: cominho, louro e pimenta do reino
1 colher de sopa de óleo vegetal
4 xícaras de água

Modo de fazer:

1. Tirar o excesso de gordura da carne-seca.

2. Colocar a carne-seca de molho em água durante a noite ou por mais de 6 horas. Trocar a água cerca de 3 vezes.

3. Cozinhar a carne-seca com duas xícaras de água em fogo baixo-médio.

4. Quando a água estiver quase seca, acrescentar o óleo vegetal, o tempero misto e a cebola. Refogar até a cebola ficar transparente.

5. Acrescentar a abóbora e 2 xícaras de água. Cozinhar com a panela tampada até a abóbora ficar macia.

Jerked beef with pumpkin

Ingredients:

500g jerked beef
500g chopped pumpkin
1/2 chopped onion
1 clove garlic smashed
Cumin, bay leaf and black pepper to taste
1 tablespoon vegetable oil
4 cups water

How to make:

1. Remove the excess of fat from jerked beef.

2. Put the jerked beef to soak in water overnight. Change the water about 3 times.

3. Cook jerked beef-with two cups of water on medium-low heat.

4. When the water is almost dry, add the vegetable oil, mixed seasoning and onion. Sauté until onion is transparent.
5. Add the pumpkin and 2 cups water. Cook with the lid until the pumpkin is tender.
